On Denmark’s tiny island of Fanø, in the days before Hill Farmstead, Shaun Hill and Ryan Witter-Merithew worked closely to develop new, novel beer concepts. The partnership bore forth several notable beers and planted the creative seeds of future others. With nearly two decades of experience and friendship, the opportunity to revisit and reclaim these touchstone creations has arrived:

Once Upon a Time in Denmark…

Springing forth from the conception of Twilight of the Idols—in its original incarnation as Fanø Julebryg more than a decade ago—each of the beers in this collection is a creative expression of whimsy and friendship, guided by experience and committed to pushing boundaries while upholding the highest standards.

This imperial stout was brewed with lactose and then aged in Heaven Hill Bourbon barrels for more than 21 months, following which the blend was conditioned atop curated espresso blends selected and roasted by our lifelong friends at the Coffee Collective in Copenhagen.

Aroma: green peppers, some American oak and sweetness, a bit roasty.
Taste: along the same lines, on the thinner side, brown sugars, some American oak.
Overall: omg, this is what I would call a brown water 😬

Dark brown. No head. Rich aroma with dark malt, dates, black sugars with a lot of bright, appetizing coffee. This has a big sugary note, slight acidity, mellow barrel, lots of coffee. The sugars are again complex, and there's a fair bit of depth. Excellent.

500mL bottle, pours jet black with a tiny head. Aroma is dominated by complex coffee notes, soft bourbon, some vanilla, and a touch of dry cocoa. Flavour is rich, with a wonderful blend of deep roasted coffee, just enough lactose to impart some sweetness, and a subtle but rounded bourbon barrel character. Remarkably complex and integrated, without any harsh edges. Wonderful.

Poured from 500mL (pkg May 26, 2022). Very dark brown with minimal beige head. Lots of coffee with a bit of green pepper on the nose, soft lactose and chocolate luckily covers most of the green pepper on the taste. Decent.

500mL bottle. Pours near black with a minimal white head. Lots of espresso, roast, bourbon barrels, and a touch of lactose on the nose. Flavour is rich, but not overwhelming; deep espresso, nice roast, tons of bourbon barrels. This is excellent.

Bottle at home in NH. Picked up from the brewery. Pours black-brown, clear, with a small, foamy tan head. Medium to big sweet flavour without being cloying, rich and rounded dark malts, warming booze, raisins, a little chocolate cake, dates, figs, bourbon. Full bodied, oily, with fine carbonation. Warming finish, more rounded dark malts, bourbon, vanilla, smooth chocolate, stewed dark fruits. Delicious.

Bottle pour shared by ClarkVV--thanks, Clark! Opaque black with light viscosity. Aroma is oak, earthy malt. Taste is earthy, sweet malt, milder coffee. Thick texture, full bodied, soft carbonation and finish as taste. OK but nothing special.

500 ml. Thank you ClarkVV for the share. Aroma is chocolate, roast, mild green pepper. Mouthfeel and texture is full and smooth. Hard to find barrel at this point. Certainly vanilla/ sugar from lactose. Yeaaaaah not stellar.

Bottle drunk 6/1/24. Dark, undetermined clarity, small ring of bubbles. Well, damn. Plentiful green pepper, light lactose. Nice malts behind it, rich and balanced, but that green bell pepper .... Well, not so much green pepper in the flavor, but then one must contend with the lactose, which seems quite overdone here. Very sweet, very low on barrel. This is not Hill Farmstead at all. Good riddance to Ryan, I guess...
