Blend of one-, two- and three-year spontaneous ales.
Very much inspired by lambic brewing traditions, each thread within the blend was made from our untreated well water, a grist of ~60% local barley malt and ~40% unmalted locally-grown wheat and whole leaf aged hops. Fermented and aged within a variety of oak formats (wine barrels, puncheons and large casks) the various components were blended for complexity and balance.

Bottle shared in NH. Cheers to Rick. Pours unclear gold with a small, foamy white head. Light sweet flavour with a small, foamy white topping. Lightly sweet, dry, nice tart and lightly sweet citrus notes, pale wood, nips of fresh grass. Light bodied with fine, massaging carbonation. Dry, quenching finish, nips of tangerine, lemon. Delightful.

375mL bottled April 1, 2022, drunk 5/28/23. Minimally clouded, leaving sediment behind as best as possible. Bright apricot-copper, small, off-white head to ring. Beautifully funky nose with plentiful lactic acidity, very light acetic and moderate brett. Rich, rustic grain behind it adding wheat and light honey-like pils malt. Good barnyard elements, with juicy brett on the finish. No alcohol or flaw. Soft, wheat-slick texture but with some biscuity, rustic malt as well. Good malt depth and attenuation to balance the fair bit of acidity. It's certainly quite sour, but not overly or acetically so. Mostly lactic with soft, juicy brett, good oak tannin and lingering malt/wheat. Excellent barnyard funk and very, very lambic-like.
