Thiolized India Pale Ale, 13° Plato, 5.7% ABV.

Při spolupráci s Kabinetem jsme si stanovili celkem ambiciózní cíl. Posledních pár je craftový svět posedlý tioly, aromaticky mimořádně potentními sloučeninami, které se v chmelech nachází ve volné, ale hlavně vázané formě. Uvolnit by se měli dát za pomoci specifických kmenů kvasnic a nám se konečně jeden z nich dostal do rukou. Tenhle proces je ještě pořád předmětem zkoumání, ale známe už několik postupů, jak svoje šance zvýšit, proto jsme se do toho pustili. Navzdory chmelení jen Žateckým poloraným červeňákem ve vystírce a trochou Cascade na whirlpoolu se nám povedlo dosáhnout slušnou tropickou vůni. Tenhle základ jsme následně ještě podtrhli menší dávkou angreštového Nelsonu Sauvin.

With guys from Kabinet, we got pretty ambitious. For the past several years, the craft beer world has been obsessed with thiols, very potent aromatic compounds that can be found in free, but mostly bound form in hops. They can be released using specific yeast strains and we finally got our hands on some of these. This process is still largely unexplored, but several production steps should increase your chances, so we just went for it. Using only Saaz in the mash and a small amount of Cascade in the whirlpool, we managed to achieve a pretty intense guava-like aroma. We used it as a base for light dry-hopping with Nelson Sauvin to layer some more gooseberries.

Can shared at home, courtesy of Petra and Jose. Even though the hop character isnt popping, the body is a touch weird and the thiols I’m not sure are free, there’s still something I quite liked about this beer. Was it the herbal grassyness that made me think Saaz wasnt only in the mash? The light phenolics that combined with said herbal hoppy notes made me think of a belgian ipa? Cant really say.

(Draught at BeerGeek Bar, Prague, 22 July 2023) Hazy golden colour with frothy, white head. Fruity, hoppy nose wose with peaches, orange, bread and herbal hops. Fruity, hoppy taste with notes of citrus, orange, peaches, grass and a gentle grassy/herbal bitterness. Medium body, with a certain sweetness. Tasty and refreshing, with an elegant herbal/grassy hop character. Very nice.

Can 0.5l. Lightly cloudy, pale gold colored. AROMA- noble hops, citrusy, citrus jelly, gooseberry. FLAVOR- smooth, neutral, lightly bitter, citrusy, jelly, floral, noble hops, white currant, gooseberry. Medium bodied. Tasty.

Tap at Beergeek. Rather thin body, med-high carbonation. Considerably flowery, winey, a bit spicy. Feels very Belgiany. Easy drinking, with medium bitterness, not really IPA level, but that does not bother me. Low sweetness. Pretty good overall.

500ml Can - Hazy golden yellow with a foamy head. Grass, citrus, lemongrass and gooseberries in the aroma. Grapes, lemon, grapefruit, lemongrass and grass in the taste. Refreshing, enjoyable and rather interesting.

Hoppy aroma and taste, tropical fruit, light citrus fruit, light to medium bitter. Light to medium body, hoppy fruity bitter finish. Good.
