Pigs Ear Day 1. Cask. Clear deep amber, tidy pale cream colour head. Palate is smooth. Mild fine carbonation. Tangy but light malts, thin cream. Mild bourbon soaked fruits. Mild vanilla. Ripe fruits. Pinch of spice. Light finish. Pretty tidy. Beers don’t have to be huge go have a nice bourbon touch.

Cask Gravity at Pig’s Ear 2015. It pours clear deep brown with a small bubbly beige head. The nose is soft, juicy, woody, charred wood, spice, vanilla, burnt toast, light smoke, toffee and fruit cake. The taste is smooth, bitter, toasted brown bread, umami, spice, varnish, charred notes, some astringency, bourbon oak, leather and some alcohol warmth. Medium body and soft carbonation. Fun to try and good depth, but it is too woody and dry. Not quite sure if the body can carry these flavours.

Cask at Pigs Ear 2015, day 1 - London. Pours clear brown with a foamy, off-white head. The aroma holds chocolate and mild vanilla. Light to medium sweet flavor, with well toasted brown bread, burnt caramel, light ash, vanilla pods. Medium bodied with fine carbonation; good condition. Nicely balanced finish with notes of dry cocoa, vanilla and restrained caramel. Tasty stuff.

Gravity at Pigs Ear ’15, 01/12/15. Mahogany brown with a decent beige cap. Nose is JD & Coke, cocoa powder, light spice, biscuit, toffee, malt, light roast. Taste assumes a pretty basic bourbon BA theme, light bourbon, biscuit, roast malt, faint fruits. Medium bodied, moderate to limited carbonation, semi drying close. So so.
