Our first beer in the series is a kettle-soured cherry beer fermented with wild yeast and bacteria in white wine and bourbon barrels, then aged on sour morello cherries. Deeply fruity with a vinous oak body and a refreshingly sharp acidity. Consume fresh or age indefinitely.

Bottle, gifted to me by my mate Dan. Unreal condition tbh. I had to wrangle the cork out. Perhaps that’s why it’s in such good nick. Deep purple. Well lasting dirty dark pink foam. White wine and bourbon barrels up front. Sweet cherry. Hint of oxidation. Vanilla. Bittersweet and super easy drinking. Loads of condition. Juicy fruit to finish. Wow. Wasn’t expecting that.

Bottle at IMBC 2018, session 3. Pours dark red with a thin foamy head. It has tart, meaty cherry character, moderate acidity, low bitterness, a little toasted wood. Medium bodied with fine carbonation. Subtle warmth in the finish, mild acetic twang, more tart, aged cherries. Good stuff all around.

From bottle at IMBC. It pours slightly hazy red with a small beige head. The aroma is soft, sweet, bright, tangy, loads of sour cherry, oak, slightly vinous and jam. The taste is tart, tangy, zingy, loads of sour cherry, strawberry, sour candy, nice mouth pucker, vinous, oak, sherbet, granny smith apple and Victoria sponge cake. Zingy, tangy and fruity. Rather nice.
