Coolship Proxima is a celebration of local flavor. In making this spontaneously fermented beer, we send the wort out to a large, shallow vessel called a coolship. As it cools, the wort is inoculated with wild yeast and souring microbiota in the Maine air. For the next two years, the beer ferments and ages in three barrels, one previously used for New England Distilling rum, one for New England Distilling rye whiskey, and the other a new oak barrel made nearby in South Portland, Maine. After blending, Coolship Proxima is filled with complex notes of apricot, delicate funk, oak, and spirits.

Clear blonde-golden. Large, well-retained, white head, for the style.
Well, this smells absolutely insane...I'm just sitting here sniffing it for 15 minutes before even trying a sip, as if it's a whiskey. Like a rye blended with incredibly soft, well-aged lambic. Juicy, malty, spicy, rich and with mellow acidity, yet still enough to keep it vibrant and lambic-like. Rich rye spice, bit of vegetal rum and lingering rich oak. No alcohol noted.
Yeah, that's sublime. Rich rye whiskey meets well-aged, mellow lambic. Toned-down acidity, but it's not limp/mushy. Malty and drying on the finish with honey and soft biscuit. Oak is playful, almost juicy. Rye spice is wonderfully flavorful. This works so well on account of all of the components being so well-aged, not aggressive and rich.

Bottle split at the Autumn Watford tasting, thanks to Fergus, 24/09/21. Very lightly hazed golden blonde with a decent lasting off white covering. Nose is grass, melon, tangy fruit esters, damp straw. Taste comprises light brett, floral tones, funk, hay bale, green berry must, vinous twang, stoned fruits. Medium bodied, fine carbonation, semi drying close with a mellow acidic rise. Decent easy drinker.

Bottle shared in Watford - cheers to Fergus. Pours lightly hazed gold with a tight, creamy white head. Lightly sweet, restrained overall, soft acidity, light pale wood dryness, nips of grass, straw, lemon. Light bodied with fine, massaging carbonation. Clean, quenching finish. Sound.

Bottle shared at Watford tasting. From Cloudwater online. A light hazed golden yellow coloured pour with a light white head. Aroma is sour waxy apple, bark, wheat granny Smith apple, airy funk. Flavour is composed of wet dog, wet funk. Apple, tangy, musty funk. Palate is crisp, earthy vinous, frothy, spritzy carbonation.

375ml bottle pours a clear gold with some white head. Nose has some grist, chrysanthemum, lemon, barrel is there, some butter, a little herbs. Flavor is tart with acid and also some alcohol, grass, champagne... more like prosecco, stone fruits. Full bodied, tart finish with some high carbonation.

Bottle at the June DC Rate Beer tasting. Poured a vibrant golden orange color with a large white head. Aroma was big funky yeast notes, brett. Lemon peel, light tangy notes. Liked the carbonation in this. Solid stuff.

Very nice stuff. Bretta and lemon. Some passion fruit. Orange hazy pour with pretty good head. Tangy tart finish. Very well balanced. Awesome stuff. Bottle thanks to Nimbleprop.

Bottle. Beer Stop, Dronfield. 2 other ratings? Wowe. Hazed pale gold. Dense white foam is lasting, leggy, and a little lacy. Looks the beans. Nose is upfront on the barrel. Dregs of spirit and wet ashtray. Some mouldy lemon. New leather slippers. Taste is dry as a bone, with a sharp, gooseberry twang. Light and a tad thin on the palate. Very drying. High, foamy carbonation. Tart apple on the finish. Ok, but too dry and the carbonation is bonkers at the minute. Maybe needs some time on it.

Bottle from House of Trembling Madness. It pours hazy bright gold with a thick, fluffy white head. The aroma is initially soft and sweetish, vanilla, oak, toasted coconut, funk, barnyard, touch of spice, hay, floral accents and touch of stone fruits (melon mostly). The taste is dry initially then softens and sweetens, funk, hay, barnyard, plenty of oak, spicy vibes, earthy rye, melon, greengage, white grape, pithy citrus, preserved lemon and grapefruit with a spicy dry oak finish. Medium body and moderate, fluffy carbonation. Good fun, but not the best in the series. Quite a lot of spicy dry oak character.
