Flaska från Etre Gourmete. Maltiga smakerroma med bröd, läder, tobak, fat, russin, rostad malt, lite torkad frukt men också lite tallskott. Aningen vinös. Bra balans. Gott.

Bouteille 75cl, BB 07/2019. Brune foncée, col épais café au lait assez tenace. Arôme est malté, cara pâle, fruité noir avec rappel de prune et de date fermentées, léger rétro de barrique et petite effluve de fumée voire de cendre. Palais est axé sur les malts, belle note de caramel, léger grillé, retrouve une impression de léger tourbé et une douceur fruitée noire de pruneaux. Amertume plaisante oscillant sur du noble, boisé modéré avec une petite sécheresse de fin de bouche, la palais conserve une approche belge au niveau de la levure. Tourbé revient légèrement sur la fin et reprend aussi un léger élément de cendres - amertume accompagne le tout et je note une petite pointe d'agrumes.

Opaque dark brown beer, good pale tan head. Smooth and fairly dry palate, reasonable fine carbonation. Smooth dry dark malts, trace of roast and a little bitter liquorice. Mild smoky Whiskey and whisky soaked fruits. Dry and spicy finish. Quite thin but flavoursome.

Bottle picked up from Dranken Geers, Oostakker, nr Gent, Belgium consumed at Builth Wells, Powys, Wales in the company of Baz, Jude, Bayley, Dom and Georgia Saturday 30th December 2017 Pours murky brown with a slim light beige head. Quite a noticeable hit from the barrel ageing, woody. Warming, some cocoa, a little boozy, a bit of sweet aged bittersweet orange. It's good. A7 A4 T8 P4 Ov15 3.8

Again big thanks to Filip for sharing! The Dochter's contribution to that famous pack of six one-offs made especially for the BXL Beerfest earlier this year, this one a lighter version of their first Mémoire it seems, a barrel-aged blend of two of their basic beers; in the first one it was Finesse and Ensemble, but since both these beers are already above 8% ABV to begin with, I guess this one has involved one of their lighter beers - but I won't bother guessing which one. Moussy, pale greyish beige, creamy, regularly lacing head, chestnut brown robe with mahogany hue, hazy. Quite complex bouquet of old chestnuts, dried figs, raisin, dry red wine, toffee, milk chocolate, vanilla-ish oak, dried sage, white pepper. Dried fruits in the onset, sweetish, old raisins, but with a tart factor that is rather outspoken right from the start, red wine-like; soft carbonation, caramelly and very nutty malt body, sweetish and a tad bready with bittering toasted edges towards the end, spicy notes (cloves, white pepper), tannic woodiness further accentuating the initial tartness, pleasantly warming, port-like alcohol in the finish. Quite complex 'coupagebier', every bit as good as the first Mémoire as far as I'm concerned.
