Boxed, wax dipped, 500ml bottle from the lcbo. Murky, dark brown pour, with a small beige head. Aroma is loaded with dark spices. Cinnamon, nutmeg, plums figs, burnt brown sugar, and some acidic woody barrel, and bourbon notes. Mouth feel is thin, and the carb is very soft. The finish is fruity, but there is a strong flemish red/ red wine vinegar flavour that is a bit off putting. I'm not sure if this is intentional or not. It really brings out the tannins from the bourbon barrel and totally throws off the sweet balance of the beer.

Dark brown colour, well carbonated, large head, reducing quickly. It's a tad too vinegary, but the base beer is smooth, with mild residual sweetness, caramelly malt, a bit biscuity; moderate acidity, and quite bold astringency in the finish, very woody, oaky, not bourbon though.
Not balanced (needs less vinegar, less acid, more sweetness), but it's interesting.

Poured from 500mL bottle (2020 release). Hazy brown with small beige head. Fairly acetic nose with wood and hint of leather. Mellows out as it warms. Taste of brett, acidity, dry oak notes. Similar to a Flemish Red. Don't pick up any bourbon notes.

In der Nase würzig, Zimt, Zedernholz. Im Trunk Gewürze, sauer, Holz, Rotwein, Sherry. Vom Bourbon merke ich leider nix, die sauren Noten und der Rotwein sind mir zu massiv, sehr schade. Tolles Flaschendesign.

Bottle from the local LCBO. Pours a slightly murky coke-brown, with a bare ring. Nose of booze, vanilla, dried fruit. Nice. Taste has sweetness, and a bit of an acidic burn, with citrus, vanilla, a little of that cinnamon (but thankfully not much), booze. There is alot going on here. There is a surprising amount of juicy fruits going on underneath. It's a real mash up, but it works, and works well. I wonder how this would cellar? The acidity would drop? Hmmmm. Might have to try.

2020 release - 500 ml bottle. To start a very poor quality soft wax top that took 10 minutes to scrape enough off to get a bottle opener to the cap. Then a overflow on opening. Clearly no quality control on this one. Pours a reddish brown with light head. Aromas and flavor of sour green oak and DMS with some underlying maltiness. Rating accordingly plus loss of points for poor packaging and bottling. Should not have been bottled IMHO and pricing is ridiculous for such crap. 3/3/1/1/1 2019 release - 500 ml bottle. Pours a reddish brown with moderate head. Aromas of sour mash, muddled fruit, and doughy malts. Flavors of sourdough, greenish oak, and sour old fruit. OK, but doesn't meet expectations. 7/4/7/3/12

500mL bottled, pours a dirty dark brown with a small beige head. Nose is funky... yep, that's infected. There's lots of brett that seems to have found its way here. Ugh. Flavour is tart and funky, with lots of brett funk, some sourness and wood. Totally fucked up. Sad.

Les Bretts dominant largement cet olfactif fruité et malté laissant s’exprimer quelques cerises sauvages, des tons de vielle ferme, un aspect légèrement vinaigré ainsi qu’un léger caramel. Les notes sont variées et complexes. Une mousse généreuse et crémeuse de couleur beige couronne un liquide brun rougeoyant, a la forte effervescence et légèrement flou. L’entrée de bouche est encore une fois dominée par les Bretts et leur coté fermier laissant tout de même une place importante au fruité à saveur de cerises sauvages, cerises de terre, un malt très légèrement caramélisé et une finale subtilement terreuse qui laisse passer une touche métallique qui traine en arrière-bouche. Le Bourbon est quasi absent, complètement englouti par la levure sauvage dominante. Le côté malté typique à ce style est incapable de s’exprimer. Le corps et la texture sont inférieurs à la norme pour ce style. La finale est à la limite du désagréable de par son coté légèrement métallique qui persiste en arrière-bouche. On a déjà vu de meilleurs produits chez cette brasserie.

2019 edition in a box and with a waxed cap. Hazy deep amber colour with a creamy, warm beige head, good retention and thick foamy lacing. Aromas are a nice blend of the Brett sourness, earthiness with the dark fruits, caramel and some nice oak-vanilla. The sour taste is kind of strong at first sip, but does calm down a little. The dark fruits are much milder, which is too bad. The Bourbon notes are felt a little in the finish, but wish it was more. More than the sourness that lingers a bit. Not bad for the rest, but probably better if cellared.
