John likes bees. John's like of bees led him to hanging out with other people who like bees. Some of the other people who like bees work at The Field Museum. The Field Museum was opening a bistro and bar. John was opening a brewery. And that is pretty much the story of how Off Color and The Field Museum collaborated to make this crisp, clean pilsner with a dry-hopped bite far inferior to Sue's.

Malts: Pils, Carapils, Pale Malt
Hops: Herkules, Tettnang, Hersbrucker

Brewery draught, 12/1/23. Clear brass-golden. Small, white head immediately to edge. Waxy, lager yeast forward with light hop and light, bready malt. Clean. Very waxy, bitter, appley and bready. Almost oxidized in flavor. Not that I think it's oxidized, but the bready malt tastes like that. Low bitterness, some vanilla, wax....

Can. This is good for what it is, and it is definitely not an IPL. Simple malt flavor and dry hops with a dry finish. Not quite a pilsner, but satisfying as a dry lager. Very drinkable, and it looks good with a large white head and gold color.

On tap at Mousetrap. Pours a hazy gold with small white head leaving sticky lacing. The aroma is cereal and straw. Light body, straw, dough, light finish, good.

16 oz can purchased as a single at Bier Station in Kansas City, Missouri. The pour is a crystal clear golden yellow with a foamy two inch white head that falls with lace. The aroma is cereal malt and a fresh noble hop. The taste is a clean, nice balance between the cereal malt and the earth, grass and mineral of the noble hops. The palate is light bodied, active carbonation and a clean softly mineral finish. Tasty beer, easy drinking.

Can from Livonia Fine Wine. Pours a clear gold with a finger of white foam that lingers. Bready malt aromas with some honey and grain aromas. Crisp and clean on the palate. Honeyed bread, mineral and light peppery hop flavors. Drying finish but balanced.

Bottle from ES. Hazy golden, with a big fluffy head. has a nice fruity-piney hop nose with clean pale malts. Thick pale malt palate, light bitterness. Sweet, but balanced, though the nice hop aroma should have at least delivered some bitterness.
