Caramelised Miso paste + Tonka beans + Rum barrels
Taste and flavour are our inspirations, as much in food as in drink. Brett tasted our caramelised miso butter at Jessop House and an idea was born. An oven of caramelising miso here, a tincture of tonka bean there and Billionaire was born. It was great!
And still we wanted to take it further. This is the first time we’ve aged beer in rum barrels and The first time we’ve aged Billionaire. On initial tasting, we can’t imagine aging it in anything else. Add touches of tannin and acidity to Billionaire and you’re Ramboozled

Clear dark brown to black beer, small creamy beige head, pretty stable, bit adhesive. Aroma: alcohol, boozy, roasted, bit funky / sourish. MF: soft carbon, medium to full body. Taste: surprisingly sourish start, bringing some balance to the sweet malts, and alcohol, combines good with the nice roast. Aftertaste: rum, lots of sourish fruits, bit sweet, roasted, lovely stuff, dried fruits, nice one!

Keg at Wild Beer - Bristol. Pours oily black with a creamy, khaki head. Dark fruits in the nose, raisins, smooth chocolate. Medium sweet flavour with further dark, ripe fruit character, burnt toffee, subtle alcohol, a whisper of roast. Medium to full bodied, oily, with fine carbonation. Finishes with some warmth, more dark berries, vague cocoa. Not bad overall.

Keg At Wild Beer Wapping Wharf. It pours opaque black with a small tan head. The aroma is rich roasted malt, umami, dark fruits, tangy, juicy, oily, jam, tangy berry, umami, vanilla, chocolate cake, rum baba, spice and liquorice. The taste is dry, bitter, earthy, chewy, tar, burnt fruit cake, umami, dark fruits, vanilla, vimto, rum, loads of dark fruit, chocolate, warming alcohol, umami, miso action and some cherry cola with a warming finish. Full body and fine carbonation. Interesting mix of gear. Good fun and nice complexity.

0.33 l bottle shared with Višnja 666 and Pilot Goran, thanks. Dark brown to black, small beige head. Rum present 🎁, caramel and chocolate 🍫, licorice. Smooth, metallic from alcohol, sweet when you get down to it. Medium body, lasting finish. Quite strong. Dry finish.
