A ’Post Prohibition’ style ale brewed with Pilsner malt, corn, and rice.. hopped at 2lbs per BBL with Cluster, Northern Brewer, and Saaz.. and oh, yeah.. fermented with a farmhouse yeast and 3 strains of Brettanomyces (from our friend Chad at Crooked Stave) to weigh in at 4.5% ABV.. ’Always’ ;7

Aroma is sourish and tart with some earthy notes, wheat, citron, and hints of spices. Flavour has bretta‐style earthy notes, some tart citron, wheat and hints of popcorn. Foamy palate. Refreshing and rather nice for this ABV.

22 oz bottle purchased at Royal in Kansas City, Missouri. The pour is a hazed yellow, with a light green tint, topped with a frothy 1 1/2 inch white head. The head falls slow with nice lacing. The aroma is soft cereal grain, fresh lemon citrus, and an inviting light funkiness that integrates nicely. I had fresh Orval once, and this nose reminds me a bit of that. The taste is light, crisp and dry. The lightly toasted cereal grains mixed with soft lemon citrus are at the front, dry light leathery funk takes over the back. Nice earth and peppery grass to the finish as well. The palate is light bodied, un filtered mouth feel, soft carbonation and the dry finish. Really clean and well constructed. One sip led to another, quite easy drinking. Really unique and nice.

Bottle. Pours with a very hazy pale yellow hued body with a large and retentive, bright ivory white head. Aromas are funky and floral, pineapple, and a good bit of tropical fruit esters. Lots of brett with a bit of suntan lotion. Waxy brett character (haven’t found a name for this yet), floral, guava, dry and rustic with earthy hops (pretty strong). Strawberry, complex esters. Flavors are nutty, and a bit of a tannic-astringent malt character. Pinenuts, grassy, hoppy, very green and dry (seems a bit like a second runnings beer by the malt character). Medium bitter, dry, neutral balance with some noticeable DMS. Very lively bubbles, dry and easy to drink. Wish this was cheaper.

Thanks to Armin for sharing - turbid gold, fizzy but fairly well sustained head - light mineral in the nose at first, floral notes, very light pineapple Brett notes, very light cobweb/dustiness - full carbon in the mouth - dry, flinty, moderate mineral - dusty, earthy yeast - mild funkiness - light lemon and sage - quite good - note quite as good as the table beer, but still very nice.

Bottle @ Matt’s house, courtesy of arminjewell. Thanks Armin! Milky yellow appearance with a white head. Tangy lemon, somewhat spicy, light brett aroma. Tangy, coconut, vanilla, somewhat bretty, a bit spicy, fairly fruity flavor. Pretty good.

Here’s the facts: no matter how nice a yeast you use or how many pounds of hops you put in, when you brew a beer with rice and corn, it’s gonna suck. Granted, Stillwater Premium is the least sucky of the plethora of awful corn-n-rice adjunct beers, but it still has a thin middle, an unpleasant texture, and nothing for the killer yeast strains to build upon. A noble experiment, but not a good beer.

Capped 750 from the Davis Beer Shoppe. Pours a light dishwater gold with a 3 finger foamy white head. Aroma is lightly sweatsox. Near medium body. Flavor is citric/sour with a lot of barnyard character. Lager malt with a fair amount of hop, but the earthiness pretty much overrides the details. Like it’s really a good sour/wild. Dry and astringent. Brilliant beer.

Bottle from a trade with michael-pollack. Pours cloudy pale golden color with huge white head. Funky brett aroma with some fruit and citrus, . Brett flavor with some fruitiness, a little grassy and a dry finish. Medium body with crisp carbonation. Nice. Thanks Pollack.

A hazed blonde ale with a thick frothy lacing off white. In aroma, a nice perfumey malt with light curacao and Brett, nice and creamy. In mouth, a nice silky malt with light citrus notes, light Brett, nice, smooth and silky. On tap at Farmhouse Tap and Grill, April 7, 2012.

750 mL bottle from Charleston Beer Exchange. Gusher. Pours a hazy straw color with a large pillowy white head. Good head retention. Lots of brett in the aroma with bright citrus notes and a faintly sweet bready finish. The taste is citrus, brett, earthy notes, bready malts and a hoppy finish. Medium bodied. Nice beer.
