Light hazy apple juice colour. Tart, dry and sweet with notes of wood, some bitterness. Not the most balanced cider.

750mL bottle, pours a clear bright golden with a large but rapidly vanishing white head. Nose brings out plenty of champagne-like effervescence, toffee apple, stewed apple, and crisp apple skins. Flavour is considerably sweeter than typical French bruts; there's indeed a musty, funky champagne-like vibrance upfront, followed by toffee apple, light apple skins, and caramel. The sweetness is definitely there, but it feels simultaneously attenuated to a large degree -- such is the beauty of French ciders. Assertively carbonated, which seems to blunt the sweetness and express the funky character. Excellent.

Sample from trade with Sjogro, cheers Sjoerd! Golden colour with a thin white foam head that quickly dissipates away. Aroma of fleshy apple, some caramel. Taste is sweetish fruity apple, fleshy with woody funk, vanilla & caramel hints, and barrel notes. Medium bodied, spritzy carbonation, dry fruity woody finish. Nicely drinkable.

Bottle from the source, shared first at home then at Maakun’s. Clear golden with some greyish bubbles. Sweet musty earthy and fruity apple juice, some very light almond spice and lemon rind. Bottle shared thanks to sjogro. Clear golden with small ring of bubbles. Earthy apple notes, leather, soft funk, dry apple peel, mineral, light farm animal notes, tannins, wood. Under medium sweet, light tart and bitter. Almost medium bodied with slight watery feel. Nice.

75cl bottle from the producer. Well, despite my comments last time it appears I am drinking this again. And the perfumed element appears to have subsided somewhat. Good balanced brut, nothing too exciting, no real complexity, but has a decent fruitiness. Drying close. Table cider. 75cl bottle. Pours a misty gold, small white head. Floral apple fruit aroma. Taste is generally clean with a fleeting fuzzy texture.. distinct perfumed notes aligned with a moderately sweet character. It’s decent, but the perfumed element is a bit off-putting for me to try again.

0.75 l corked bottle from last trip to Graz with Marko. It poured hazy yellow body with medium iszed head. Sourish riped apple aroma, corky. Sweetish flavor, real apples, bit stale, wood, cork, comes to tart palate. Quite rich in body, quite sweet for a brut, having long finish with only a bit of sourness. Very nice thing, one of the better ciders I’ve had for sure.

Cidre Bouché Brut, 4%. From the Wein & Co at the SC Seiersberg, shared with heavy Poured a lovely misty full yellow body initially with a head tinged with yellow that obviously disappeared almost immediately and pierced with carbonation. Sweet gluey taste, slightly acidic, fresh appley fruity, lovely. Unexpectedly and lovely sweet appley gluey taste, bit corky. Very nice, drinkable stuff. A sweet Brut, can’t imagine what the Doux is like.
