From our standpoint, if you’re going to name yourself after a special place like Phantom Canyon, you need a building just as special. Thus, the historic Cheyenne Building named after Cheyenne Mountain and Chief Two Moons of the Cheyenne Indian Tribe, a luminary whose stone visage watches over the front entrance.
Since opening in 1993, we continue honoring the spirit of the Phantom Canyon and Chief Two Moons by dedicating ourselves to giving Colorado Springs the best beer, the best food and the best hospitality we can. All three levels share stories from brew and food lovers of all walks of life, making us one of the best restaurants in Colorado Springs.

Sample on tap at the brewery. Black color, with a small, tan head. The nose is distinctly toasted coconut and milk chocolate. It’s hard to pick up any other aroma other than that, which is fantastic! Sweet and sugary, with a light bitterness that balances it out a bit. Medium to heavy body, grainy, and syrupy. This is a delicious beer, and well made. Very focused and clean.

Snifter at the brewery. Pours dark brown, with a tan ring. The nose is smooth coffee, cream, dates, syrup, and light cocoa. Sweet and malty, with very little bitterness. Medium body, with a grainy and malty mouthfeel, and a clean finish. This is a nice, easy beer, and the coffee adds lovely aroma, without the acrid burnt character that usually accompanies it. Quite nice!

Pint at the brewery. Pours clear, pale yellow, with a medium, creamy, white head and good lacing. The nose is tangerines, apricots, butter toffee, and orange peel. Sweet and a little malty, with a smooth, assertive bitterness. Light to medium body, crisp, a little astringent, with a clingy, bitter finish. This is a sharp, focused, and delicious beer.

Pint on tap at Jake and Telly’s. Dark brown color, with a thin, tan ring. The nose is strong and decadent. Notes of butter toffee, walnuts, vanilla, oak and smoky peat, cinnamon, cocoa powder, and maple syrup. Very sweet, with a subdued booziness, and a little bit of smooth bitterness. Very heavy body, syrupy, thick, and a little grainy. This is a dessert beer. Sweet and thick. The whiskey character is forward and wonderful in the nose, but doesn’t burn in the finish, which is very nice. This is very well done!

Snifter at the brewery. Pours dark brown, nearly black, with medium sized, frothy, tan head. The aroma is smooth, bittersweet chocolate, vanilla, oak and a touch of peaty smoke, and a very pleasant chili pepper character. Sweet, with a good, light bitterness to balance, and a building, intense heat. Medium to heavy body, smooth, with an easy, silky feel, and a clean finish, in spite of the heat. This is an amazingly smooth, well made, and delicious chili stout. None of the unpleasant burnt flavors, nor the celery character that often comes with a chili beer. Instead, it drinks like a nice chili chocolate bar, with great character, balance, and body.

On tap in a flight at the brewery. Pours a hazy yellow, with a creamy, off-white ring. The aroma is dominated by pineapple and kiwi, and assorted citrus, with some wheat bread and biscuity yeast notes. Sweet and very citrusy, with a pretty nice and mild tartness that lingers through the finish. Medium body, very acidic, silky, and clingy. This is a tart and fruity beer. Smooth, approachably tart flavor, and good, focused aroma.

Sample in a flight at the brewery. Pale, clear yellow color, with a small, white head and good lacing. Crisp, fruity aromas of green apples and unripe bananas, cane sugar, bread dough, and a bit of earthy hops. Sweet and fruity and malty, with a mild bitterness. Light to medium body, crisp, grainy, and lightly acidic. This is a pleasant and easy lager. Aromatic and interesting.

5 oz. pour at the brewpub. The 2015 version, aged for 7 months in Breckenridge whiskey barrels. Dark, cloudy, orangish-brown color, with a bubbly, tan head. The nose is deliciously boozy, with notes of caramel, vanilla, and toasted oak. Good aromas of dates, cloves, peat, pine, and syrup. Very sweet and malty, with a light hop bitterness and significant booze warmth. Very heavy body, creamy, thick, with a surprisingly clean finish. A delicious and flavorful beer. The barrel may be a little too forward for some, but I love the whiskey notes, and it plays very well with the base beer. Thoroughly enjoyable!

5 oz. pour at the brewpub. Dark orange color, with no real head. The nose is wheat bread, hay, and a surprisingly subdued grape juice note. Sweet and malty, with no bitterness or tartness. Light to medium body, lightly acidic, and clean. This is a very mild and unoffensive fruit beer. The grapes are not very forward, and add very little.

Pint at the brewpub. Dark, brown color, with a beige ring, and no lacing. The nose is nice biscuit, pine, caramel and brown sugar, and some earthiness. Sweet and malty, with a good, spicy, hop kick. Medium body, grainy and acerbic, but not too unpleasant. This is a solid, tasty, and quaffable ESB. Good malt backbone, and lovely, mild hoppiness that balances nicely into an easy and pleasant flavor.
