Draught at Woods Hill Table, 5/12/26.
Bright cherry and mild, aged balsamic in the nose, with light Brett and round malts. Touch of toast/roast but nothing big. Seems homogeneous and easygoing with very low acidity. Good funk with earthiness and such.
Soft, with low carbonation but a pleasing malt texture despite the lack of wheat slickness/softness. Acidity is mild, showcasing the malt and gentle oak, with a big cherry and mild balsamic character. Touch of roast/toast. Another well-done blend.

750mL bottled 2022, drunk 4/30/23 at Tørst. Maroon. Clear, big, beige head slowly to cover. Roasty toasty malt. Raspberry, cherry, date and big fig. Lower acidity than expected. Though gentle lacto-acetic emerges. Date, fig, plum, caramel, vanilla, raspberry. All work towards a stout-like character but it's a light, lean body. Leather, cherry, vanilla, good sweetness to balance. Certainly quite interesting and well-done. Malt forward lambic!

0.75l bottle. Huge thanks Zhenya. Clear full amber body, no head. Corky, honeyish oxidation yet bretty, minerally, herbal, elegant. Lean, dry taste, oaky, bretty, dried figs, light green apple, bitterish, minerally. Solid, not enchanted.

0,75l from bottle at home. Bottled 28.07.2021, Blend 67 20/21. amber clear color, small white head. Smells funky, earthy, oak, parfumy, peppery, bit lactic. nice to very nice smell. Full body, soft carbonation. Tastes funky, oak, earthy, horseradish, lactic, peppery, tobacco, bit oxidized. Finishes dry and medium bitter with notes of funk, oak and walnut notes. nice to very one, balance could be better, too much acitity. expected a bit more.

Says it is 1/5 lambic from "a new small lambic brewery" but gives no names. Secrecy, or lack of community acknowledgement? Regardless, one of my fave 3F bottles of recent years, likely due to its comparatively low acidity.

Bottle, celebration for a certain's publication! Nose is absolutely on the money. Lambic and sharpness. Just perfect. Colour of red apple cider / a dark red one. I cannot really describe the perfection of this beer to me really - it's just spot on with this maturity from the pinot noir, a sharpness of the lambic, a sweetness that reminds me of the best ciders. It's just spot on

Bottle picked up at 3F a couple of months ago. Hazed ginger gold. Soppy white foam has some legs. Looks good. I love when a beer is so distinctive. This could only be a 3F beer. Literally smells like being sat in the Droom. Big on the oak. Sweet cognac. Some bright tart grain. Light leathery notes. Tons of fruit and funk overall. Taste is juicy tart and light bitter. Hugely drinkable. Juicy finish with the cognac barrel showing later on. Class.
