Description
Raphaël Mettler and his team have been brewing beer with a passion since 2003, and their enthusiasm is eminently contagious: the Trois Dames beers from Ste-Croix challenge the taste buds and flatter the eye, and that is exactly what makes them original. We believe in making a top-notch product, the reason why we carefully select fresh ingredients.

On tap at The Alehouse - Palmhof, pours a clear golden with a tiny white head. Aroma brings out wild yeast, lacto, oak, and some light stone fruits. Flavour is extremely acidic, with wild yeast, intensely acidic stone fruits, and oak. The acidity is a bit much to handle. There's a complex beer under here, but the acidity is too much.

Bottle, 7.8%, part of second round of Sin Frontera collab, bottled spring 2016. Color: Slightly hazy orange amber, dense and long lasting off-white head. Aroma: Tart and sweet, yeasty, fruity, funky, hay. Taste: Starting over moderate to medium tart, soon also light sweet and bitter. Hay, minerals, fruity notes of sour and also sweet apple, tart appleskin, citrus, lime. Subtle wild yeast funk, yeasty hints. Very subtle, slightly boozy Cognac notes and pretty strong oak wood and a lot of tannins. Dry mouthfeel. Medium body, just below average carbonation. Maybe a bit unbalanced but nice complexity. Good one.

Tap at APEX. Sounded interesting. Got the Jalapeño and raspberry but not the double. Alright and fairly refreshing. 330ml bottle as La Fraicheur Biere Blanche, 4.8 % abv, kindly shared by Per. A solid wheat haze to a grey golden body. Spotty lacing. Wheat fruity nose, inviting. Fine blended taste of mid-dry citrus, wheat and grain, lightly spices. Mid-sweet fruity wheat to the finish. Smooth in the mouth. Pretty nice. (With friends at Sommarøy 06.09.2019).
