Intensiv fruchtiger Geruch mit deutlich holziger Note, worunter sich die Säuerlichkeit verbirgt. Der Antrunk ist genau so intensiv, wie man es im Geruch deutet, Intensiv sauer mit kirschiger Note, die der Säuerlichkeit nach und nach unterliegt. Die gerochene Holzigkeit lässt sich weniger, aber doch teilweise hintergründig feststellen. Am besten ist das Bier im Mittelteil ausgewogen, hier liegen Fruchtigkeit und Säuerlichkeit fast gleich auf. Anschließend wird das Bier deutlich saurer, bleibt aber weiter harmonisch und wird nicht zu stark. Komplexer Abgang, in dem die Säure zwar über allem Anderen steht, dahinter harmonieren Kirschnoten und leichter Hopfen. Test vom 27.10.2007, Gebinde: Glasflasche Noten: 12,13,12,13,13,13 - 12,75

750ml bottle - My first unblended as well... pours yellowish with very little head. The aroma is sour and funky and obviously so is the taste. Like a gueuze, this lambic does not have fruit added and the typical wild yeast lambic funk really dominates the flavor. It didn’t blow me away though it was enjoyable enough (or maybe not given the high price point).

[2001 Edition] Pours hazy golden with a tiny white head. Sour aroma with your typical hay, leather, horseblanket and wood aromas. Flavor was sour with barnyard, hay, grapefruits, lemons and wood. Finished. So much better than the younger ones I’ve had.

2003 vintage: Unclear yellow with a sprinkly off white head. This is classic cantillon. Sour vinegar, white wine & straight up dirty. Earthy & toxic! Woody & dry. Rubber & leather! Classic! Dry... re-rate 32th birthday. Incredibly complex, soft and drinkable. 3,9-4,3

375 ml. bottle; 2004 vintage bottled in 2006. Earthy sour aroma. Hazy orange apricot color with a white head that really left rapidly. Thin to medium bodied with very mild carbonation. The flavor is lambic sour. A bit like earthy green apple. Pineapple? The finish is dry and sour and bitter. Changes from sip to sip. The finish is lactic, and fruity. Something like sucking on a lime peel. Problem: It is what it is, and coming up with what it is not to describe it doesn’t work. Good stuff. Very good stuff.

Deep red with smal pink head. Sour, grapy and very vinious aroma. Flavor is sour, vinious and woody. Grapes are present. Reminds me of red wine. Rerate 24/11/2007 Pours dark red with tiny pink head. Tarty aroma with plenty of grapes. Flavor is sour, vinious, oaky and has perfect balance. Ends of with long lasting sourness.
