Description
Botanist & Barrel crafts real southern ciders, sours, and dry fruit wines. We are the South's only natural cidery focused on spontaneous and wild cultures. We craft healthy adult lifestyle beverages for any occasion. We support our local farmers using only locally, sustainably and organically sourced fruits, including blueberries, apples and more from our organic estate farm. Only tree ripened apples are used in our ciders with a focus on traditional southern heritage cider apples.
All of our ciders and wines contain little to no residual sugar and are low calorie. As an experimental winery we have almost no rules with the exceptions being we never add additives like sulfites and we do not fine, filter or pasteurize any of our ciders or wines.

On tap at Tree Rock, pours a clear pink, no head. Nose brings out subdued tart cherries, crisp apple skins, and farmhouse funk. Flavour is similar, with farmhouse funk, subdued tart cherries and mustiness. Dry and funky. Nicely made.

On tap at Tree Rock, pours a clear pink, no head. Aroma brings out subdued bourbon barrel character upfront, with even more subdued cranberries. Flavour is more subdued on the bourbon, with lightly tart cranberries, must and funk. Very dry, with not much barrel character on the finish.

On tap at Tree Rock, pours a clear reddish pink with a tiny white head. Aroma brings out musty blueberry skins, with light funk. Flavour is along the same lines, with a very nice funkiness to it, followed by subdued dry blueberries. Musty and funky, with a dry finish. Excellent.

On tap at Appalachian Vintner, pours a clear blonde with a tiny head. Aroma brings out light farmhouse funk, crisp apple skins and a touch of strawberry. Flavour is nice and funky, with funky strawberries, crisp apple skins, and a really nice dry wild yeast character to finish it off. The booze is well-hidden. Excellent.

Sample at Upstate Craft Beer. This Cider is a clear lustrous purplish-red color with a minimal white head that burns away quickly to a sparse outer ring. Spotty lace. Aroma of berry, yeast and spice. Medium body with flavors of tart blueberry, slightly funky yeast and spiced apple. The finish is mildly tart with a berry and apple aftertaste. Above average overall.

Draft at Salud. Clear pink color, rare bubbles. Fragrant perfume aroma. Taste is earthy apples, subtle spice, tannins. Wow. Easily the best cider I've had in North Carolina, blows away the competition.
