Description
Botanist & Barrel crafts real southern ciders, sours, and dry fruit wines. We are the South's only natural cidery focused on spontaneous and wild cultures. We craft healthy adult lifestyle beverages for any occasion. We support our local farmers using only locally, sustainably and organically sourced fruits, including blueberries, apples and more from our organic estate farm. Only tree ripened apples are used in our ciders with a focus on traditional southern heritage cider apples.

All of our ciders and wines contain little to no residual sugar and are low calorie. As an experimental winery we have almost no rules with the exceptions being we never add additives like sulfites and we do not fine, filter or pasteurize any of our ciders or wines.

12 ounce can from the cidery, 6/10/23. Mildly hazy pink-amber. Medium fizzy white head, poor retention. Aroma of cherry, blueberry, sweet apple. Taste is sweet berry, sweet apple, vanilla. Not really dry as advertised. Mild funky character from the wild fermentation. Nice.

Clear 375ml from Botanist downtown. Goblet @home during an exceptionally quiet Saturday night. Hazy, straw gold, active pour. Salty & sour, earthy nose. Seven Up & barnyard. Twangy sour, soapy, herbal, rubber, lime, wet hay, sweet vinegar, grain, steel. Bitter-sharp. Sidra-like but more tart less sour funk. Crispy, dusty, very acidic, belly burn. Okay. The same record over & over.

Old school Botanist, clear medicine bottle from their AVL taproom. Hazy, pale amber, strawberry, still pour. Sour, bubblegum, vinegar dipping sauce-spiced nose. Sort of a sock-y stink that takes time to air out. Thin, botanical dry, flat Seven Up, faint blueberry skin, white wine. Weak tart, ginger, subtle sweet vinegar, lingering floral. Gin is lacking. Starting to turn but still okay.

More recent 2021 edition; 8%. Not worth the re-list. Mojito glass @home. Yeasty, sharp, bubblegum, dry floral fruit nose. Dusty, yeasty, lots of tart blueberry skin, very earthy, hints of sweet vinegar. Yeasty, sufite-y, dried fruit, white wine, popsicle stick finish. Old school, tamed Botanist. Good.

$6.60 Single can from Appalachian. IMO, a overpriced second-runnings product, but it might be delicious. Goblet @home. Yeasty, dull, straw-colored, soda sizzle brew. Sour, heavy grape bubblegum, lime, white pepper, prickly telltale Sidra nose. Taste is really fun grape Bubble Tape, confectionery sugar, sour apple candy, kiwi-melon tart flavor, vinegar slickness, slight earth. Strong forced carb, easy abv, yeasty finish. The grapes meld well with the inherently vinegary, wild, #bad house apple blend. Traminette is usually a lot softer up north. Cool? Sure.

Rare tap. This is Botanist's house blend that usually turns to vinegar after all the assorted adjunts & bottling happen. Half pour @Burning Blush. Slightly hazy, oily, pale gold. Big but faltering head. It was four inches tall, paid my tab, then it was gone in 10 seconds. Yeasty, browned maceration, sweet veg, slight mint. Mellow bittersweets, flat lime, pear, calcium, faintest vinegar. That vinegar is the tell tale sign of things to come. Lingering acidity but very minimal tartness. Pretty damn good. Why sit on it?
