Description
Botanist & Barrel crafts real southern ciders, sours, and dry fruit wines. We are the South's only natural cidery focused on spontaneous and wild cultures. We craft healthy adult lifestyle beverages for any occasion. We support our local farmers using only locally, sustainably and organically sourced fruits, including blueberries, apples and more from our organic estate farm. Only tree ripened apples are used in our ciders with a focus on traditional southern heritage cider apples.

All of our ciders and wines contain little to no residual sugar and are low calorie. As an experimental winery we have almost no rules with the exceptions being we never add additives like sulfites and we do not fine, filter or pasteurize any of our ciders or wines.

Bottle gifted to us by our new neighbors a few weeks back. Haven't had this one yet, cool. Glass mug back home with Thanksgiving in the oven.

Super pale, slight yellow tinge, very faint sediment but mostly bright. Flash of soda head.
Scent is pushing sharp pineapple & sweet n spicy ginger juice over a warm, earthy spice note ...bottle says turmeric.
Tart & sharp indifferent apple, almost no tannins. Lemon, hidden citrus peel, very bright ginger with just a pinch of heat, earthy middle-end with the wild/sidra-esque base coming through with pickled pineapple on the tail.
Crispy, quite thin, dry & super fruity. Slight sulfite headache. Very subtle slickness on the tail.

Good way to make use of an acetic base. Tasty.

Panda courtesy of SHIG, cheers Shawn! Pale yellow gold colour, bubbly white foam head that dissipates away and aroma of apple, fleshy, funk. Taste is tart, appley, musty funk, some skin and mineral notes, earthy with drying acidity & tannin. Light to medium bodied, light carbonation, dry soured finish. Quite drinkable.

Wine glass at the neighbor's house with my wife.

Not quite settled, light purple on burgundy table wine pour.
Vinous nose, stemmy, with a restrained twangy apple & hay funk note.
Taste is bittersharp, strong & lingering Nouveau grape presence, more like off-dry, with a thin & acidic apple tartness on the backside. Very slight wild fruit funk. Finish is all grape stems & jam.
Low fizz, juicy, a touch watery, decent acidity, light abv needed some more punch.

Very approachable.

Can thanks to SaltyGrog: Poured a straw yellow golden, with a white frothy head. Aroma is sharp apples, skins, funky. Taste is tangy, sharp apples, bitter skins, finished dry.

Pricey single from Whole Paycheck. Thought it was a typo after I checked my receipt. Speaking of typos, 8.9% abv on the label but everywhere on the internet says 14%. It drinks closer to the 8%. Hazy peachy, watermelon or a sort a pink lemonade color. A lightly fizzy, whatever pour. Rose water, muscadine, tart & twangy apple juice nose. Watermelon, wax, tart berries, sour apple, sweet vinegar, lingering earthy bite, lightly sulfited tail. Very mild & approachable funk underneath the strong acid. Waxy texture, juicy, thin & very tart, warming belly & a bit of fogginess. Maybe skewed a bit too sour but the flavor is good. Forget about the price & it's suddenly great.

Half liter bottle from the downtown AVL location, 12/23/23. Hazy pale orange, thin head, poor retention. Aroma of dry apple, sweet apricot, and a faint leatherish note. Taste is sweet apricot followed by dry apple and some grassy notes. Faint hint of cinnamon. Well balanced.

On tap at Garden Path - Bellingham, pours a clear blonde with a small white head. Aroma has crisp apple skins, gentle sweet wine barrels, and light tannins. Flavour has moderate acidity, plenty of apple core, some tannins, and gentle wine barrel character. A bit too acidic for me, but there's nice complexity and good accentuation of the wine barrels. Good stuff, but not what I was hoping it'd be.

On tap at the avl location. Hazy, full, orange-rose honey, quick soda spritz pour. Clay, lemon sour, floral, slight funk. Twangy cider vinegar, lemon, rose, slight dry cherry essence on the back end. Thin, acidy, middling tartness, inconsistent carb, stretched to 6.9%. Gimmicky. Just tastes like their overly vinegary house cider with tasty grapes.

12oz pour at the Avl taproom. Clear, pale gold, light fizz. Fresh herbal & white grape nose. Bold citrus acid upfront. Mellow floral-earth wax. White grape. Mostly dry. Very thin. Inconsistent carb that started out strong. Surprisingly decent.
