Description
Botanist & Barrel crafts real southern ciders, sours, and dry fruit wines. We are the South's only natural cidery focused on spontaneous and wild cultures. We craft healthy adult lifestyle beverages for any occasion. We support our local farmers using only locally, sustainably and organically sourced fruits, including blueberries, apples and more from our organic estate farm. Only tree ripened apples are used in our ciders with a focus on traditional southern heritage cider apples.
All of our ciders and wines contain little to no residual sugar and are low calorie. As an experimental winery we have almost no rules with the exceptions being we never add additives like sulfites and we do not fine, filter or pasteurize any of our ciders or wines.

12oz pour at the Avl taproom. Clear, pale gold, light fizz. Fresh herbal & white grape nose. Bold citrus acid upfront. Mellow floral-earth wax. White grape. Mostly dry. Very thin. Inconsistent carb that started out strong. Surprisingly decent.

$5 single from Whole Paycheck. Best before 2/20/25 WF sticker. Pint glass at home before a local Tourists game. Hazy, honey, active brew with a vapid splash of soda head. Honey, fresh mulch funk, bittersweet apple sauce, slightly zesty nose. Taste is yeasty, fresh cider. A little floral, minerally, some gum, lots of browned apple sweetness to contrast the iron-y, bitter-sharp finish. High acid, medium-low tart, still fermenting. Really crispy & bitey carb. Surprisingly decent & even good.

Botanist AVL. Juicy veggy, savory strawberry with a ginger ale edge. Semi-sweet edging dry, cooked down strawberry, ginger wine, a bittergreen finish that delivers a surprising tannic full stop. Just a little sweet & textured. Zero funk revealed. More of a fresh flavor. Way better than anticipated. Liked this a lot.

Pale, hazy, brushy gold. Barnyard, sulfur, earth, sour nondescript stone fruit. Semi-sweet, twangy vinegary cider base, spent sour peach, onion, baby powder, yeast. Sparkly, sour, sharp, plenty acidic. Could be better.

Full pour at Botanist AVL on a quiet afternoon. Clear, pink blush pour. Softly mulled dominant orange nose. Nice perfume. Rounded bittersweet apple, juicy grape skins with minimal tannins. Soft, possibly too light carb, could have been stronger. Quite nice.

Om tap @Botanist AVL. Very faint blueberry skin on the nose. Best part. Clear, pale, hint of blush. Quick bittersharp start, medium low acid, earthy, can't find the peppers. Lady serving us agreed that this batch was too weak on heat. Half flat. Thin. Base cider was sorta wack too. Meh.

Single from 604. Lost it in the back of the fridge for a month. Mojito glass at home. Spritz-y, clear, watermelon-plum pour. Smells of aromatic apple-grape juice box with a little white zinfandel. Tastes is dense with bittersharp & tart grape skins over some waxy, semi-sweet common apple cider. Mildly curious muscadine funk, Skittles, floral apple skin, earthy & waxy finish. Thin, well carbed, medium acidic but very sharp, a little weak in punching power. Best Artifact cider I've had in forever. Just took some funky second hand grapes to hide how off everything else is. Cheers.

On tap @Botanist AVL. Notes from Sept 1st. Clear, oily medium gold. Botanical, sharp, astringent, boozy nose. Mellow maceration, sharp botanicals, sour lime, gum, grain glue, mild barnyard with a rich, caramelized semi-sweet finish. Kinda good.

12 ounce can from the Asheville tasting room, 9/23/23. Hazy pale yellow, no head. Aroma of dry apple, earth, hint of funk. Taste is dry apple, apple skins, spice, mustard, funk. Bright. Solid.

Coerced in buying this very retail-priced bottle at the tap room, despite my reservations for the house flavor. Mojito glass @home. Hazy, spritzy, murky gold pour. Scent is quite macerated, brown, leafy earth, with the bittiest bit of vinegar starting to develop. Taste is shockingly not house, at least not yet. Bittersweet apple forward, numbing grapefruit pith, lime, good amount of sharp to contrast, medium strength salinity, earthy finish with just a bit of tbd vinegar that the house flavor always develops. Good medium & consistent bubbly, medium high acidity, medium acidity, dry popsicle stick finish, just a bit sweeter than I'd like. A good result of using actual cider apples, but this is pretty fresh & hasn't yet turned.
