Description
Botanist & Barrel crafts real southern ciders, sours, and dry fruit wines. We are the South's only natural cidery focused on spontaneous and wild cultures. We craft healthy adult lifestyle beverages for any occasion. We support our local farmers using only locally, sustainably and organically sourced fruits, including blueberries, apples and more from our organic estate farm. Only tree ripened apples are used in our ciders with a focus on traditional southern heritage cider apples.
All of our ciders and wines contain little to no residual sugar and are low calorie. As an experimental winery we have almost no rules with the exceptions being we never add additives like sulfites and we do not fine, filter or pasteurize any of our ciders or wines.

375ml bottle from Botanist downtown. Bought a single of Graft's version for good measure. Mojito glass @home. Gunky, sort of hazy, plum-colored, tall soda head. Tangy, plum-y, vinegar-sweet cider, itchy berry skin nose. Vinous, deep berry skin, plum, astringent enough, twangy vinegar sharp apple, tiny bit of wood, earthy grape skin finish. Prickly carbonation, boozy enough, nice acid, yeasty. Great. Graft version tbd.

12 ounce can from the downtown AVL location, 8/7/23. Hazy amber, thin white head, poor retention. Aroma of dry tart apple, mildly funky. Taste is dry and tart apple, apple skins, earth. Lingering tart. Nice.

12 ounce can from the AVL downtown location, 7/31/23. Clear gold, thin wisp of a head. Aroma of dry and earth apple, floral notes (tea I presume). Taste is tart and dry apple, tea, floral. Delicate. Nice.

12 ounce can from the cidery, AVL. 7/28/23. Hazy pale yellow, thin head, poor retention. Aroma of tart apple, skins, sulfur (in a good way). Taste is dry and tart apple, glue, earth, skins. Mild tartness, dry. Really comes across like a Basque cider, other than the present carb. Nice.

On tap for an impressive $14 @Botanist, Asheville with my wife before dinner elsewhere. It makes sense, but till hurts. Clear, medium gold, twinge of pink. Waxy, very floral, soft sour raspberry nose with a faux hint of ginger. Taste is twangy like their Nought sour mead. Weak on raspberry, some lime, sharp melon muscadine finish. Lingering honey on the tongue. Thin, slight carb, big acid & tart. Good. Very familiar.

On tap @Botanist Asheville with my lovely wife. Clear, pale pink pour. Bit earthy/shroomy, with a generic but very deep fruit nose. Sour, very juicy. Tastes like cherry-elderberry, with some raspberry & house zing. A little murky & low carb, but without much of the house funk. Fruit punch cocktail. Bit bored.

Can to glass @Botanist Asheville with my lovely wife; $9. Dusty, pale, semi-clear. Earthy, very floral soapy nose. Zingy, soapy, bite-y tartness, medicinal, strong acid with a soft vinegar sweetness through the tail. Low house funk, very cleansing. Okay.

Old school, clear B&B medicinal bottle from their shop downtown. Nothing new on tap. Lo-ball @home. Dusty straw haze & very still. Soapy, salty, faint apricot, mushy apple, veg. Taste is Irish Spring, sweet veg, salty apples, weak but lingering apricot brightness, mellow tannins, lightly smokey whiskey. Vinegar is just starting to peek in, as most of their ciders start to turn after a few months. I like the booze level, but the sweet slickness on top of it being still isn't great. Whiskey & apricots should be dope. They make another apricot cider(Precocious) that is way better.

Clear 375ml bottle from their downtown shop. Bottled in 2022, lo-ball glass @home. Hazy, pale straw, quick spritz pour. This is no longer still. Bubblegum, earth, rubber, crazy florals, fresh cut grass, sour apple, lime nose. Tart & twangy upfront, cider vinegar sweetness, pineapple, clean salty sweat, lingering lemon lime pith, mellow earthiness on the tail. Yeasty, extra sharp, prickly incidental carbonation, whatever abv. A touch cleaner than their house stuff, but still super vinegary.
