Definitive Brewing was formed in 2017 when we came across lightning in a (beer) bottle. After months of planning, we were introduced to our now Director of Brewing Operations, and found an ideal location, all in a single week. Our investment group is made up of friends and family all with ties to Lake Cobbosseecontee in Manchester, ME. After 6 months of tireless efforts to transform an old scaffolding company into a production brewery and tasting room, we opened May 19, 2018 on the legendary Industrial Way.
After two years of operation in Portland, our team chose to open a second tasting room on May 22nd, 2020 in Maine's southernmost town, Kittery in the heart of the shopping district. Kittery is pillar in Maine's food and beverage scene, and the opportunity to become part of this phenomenal town was one that we could not pass up.
At Definitive Brewing we strive to provide a memorable tasting room experience for all of our customers. This is culminated by our wide variety of beers, including our Kolsch (Contee), Session Ales, IPAs, Stouts and Sours! Thank you for your continued support, and we hope to see you soon!

Can (10/2/21) pour from Beer and Wine Nation. It's an opaque light brown-dark yellow with no sparkle, finger-width white foam head with poor retention and veils of soapy lacing. Aroma is strong mix of citrus and stone fruit with mild corn chip. Taste is strong orange, citrus, mango, late grain. Mouthfeel is medium side of light-to-medium bodied with smooth texture, soft carbonation and finish as taste. Overall, somewhat nondescript and not super bright and juicy given all Citra, but OK.

Can (10/15/21) from Beer and Wine Nation. It's an opaque light brown-dark yellow with light sparkle, 3-finger width white foamy head with excellent retention and nice soapy lacing. Aroma is strong berry and melon. Taste is nondescript sweet fruit with some berry, mild late citrus, pine and cracker. Mouthfeel is light-to-medium bodied with smooth texture, average carbonation and finish as taste with lingering dry bitterness. Overall, Simcoe seems to carry the day. OK, but not terribly interesting.

Can (10/15/21) from Beer and Wine Nation, Merrimack. It's an opaque dark yellow with light sparkle, 2-finger width white foamy head with decent retention and light lacing. Aroma is apricot and tangerine. Taste follows aroma along with cracker backbone. Mouthfeel is light-to-medium bodied with smooth, frothy texture, hint of alcohol, soft carbonation and finish as taste. Overall, good strength of aroma and taste.

Can from my brother: pours clear gold with white head. Aroma is light grain, and smells very much like beer for lack of a better word. Taste is mellow inoffensive, lightly sweet, refreshing with fruity notes.

Can from my brother: pours hazy with a white head. Aroma is citrus, some tropicalish notes like pineapple. Taste is sort of bitter, tangy, juicy. Solid.

Can (8/6/21) pour from the brewery in Kittery. It's an opaque dark yellow-light brown with no sparkle, finger-width white foamy head with excellent retention and nice rings of lacing. Aroma is pineapple, melon, mild bubblegum. Taste is pineapple, melon, grains. Mouthfeel is medium side of light-to-medium bodied with smooth, thick texture, average carbonation and finish as taste with mild lingering bitterness. Overall, decent strength. Not the most complex. Strong all around.

Can (7/27/21) pour from The Beer Store, Nashua. It's an opaque dark yellow-light brown with nice sparkle, finger-width off-white foamy head with good retention and spotty lacing. Aroma is strong lemon marmalade, melon. Taste is astringent lemon with biscuit and bitter. Mouthfeel is light-to-medium bodied with smooth texture, lively carbonation and crisp, fairly dry finish. Overall, some decent elements but astringent citrus and excessive carbonation detract. Not one of Definitive's best.
