Definitive Brewing was formed in 2017 when we came across lightning in a (beer) bottle. After months of planning, we were introduced to our now Director of Brewing Operations, and found an ideal location, all in a single week. Our investment group is made up of friends and family all with ties to Lake Cobbosseecontee in Manchester, ME. After 6 months of tireless efforts to transform an old scaffolding company into a production brewery and tasting room, we opened May 19, 2018 on the legendary Industrial Way.
After two years of operation in Portland, our team chose to open a second tasting room on May 22nd, 2020 in Maine's southernmost town, Kittery in the heart of the shopping district. Kittery is pillar in Maine's food and beverage scene, and the opportunity to become part of this phenomenal town was one that we could not pass up.
At Definitive Brewing we strive to provide a memorable tasting room experience for all of our customers. This is culminated by our wide variety of beers, including our Kolsch (Contee), Session Ales, IPAs, Stouts and Sours! Thank you for your continued support, and we hope to see you soon!
16 oz. can. Flavor has a little bit of citrus, tropical fruit (pomeapple-ish) and the Sabra hop shows some coconut. Not one element stands out to brightly. She a mild juice character. It is a nice drink.
16 oz. can in a trade with tfontana, thank you Tom. Nice fruity / tropical aroma. Flavor starts out with a tropical fruit and leads into a mild grassy, floral finish. Mild bitterness that helps balance the sweet fruit. Feels much lighter than the 8.5% ABV. The grass in a stacks up as it warms. Nice!
Can in trade with tfontana, thanks for the opportunity. Hazy electric lemon with a thin frothy white head that persists. Juicy tropical and citrus dripping off the aroma. Light bready maltiness and hints of alcohol and stone fruit round this out nicely.
Draught at Dorchester Brewing, 9/9/21. Bright lemon jelly. Medium haze with a small white head that steadily fades to ring. Again (as with the previous DBCO hoppy beer I just tried) with the dirty/wet dog hop nose. But seems nicely balanced behind it with some vanilla accented honey and bubble gum mixing with juicy citrus. Juicy citrus with light bitterness on the end. A bit of saccharine character in here. Pine floral mango. Maybe getting a bit too astringent/punchy on the ending bitterness. Very creamy, thick texture though. Pretty good attenuation though still on the sweeter side. A bit flat overall, but fine. Lingering pine and papaya. Needs less acidity and less sweetness. Too dynamic in a bad way.
14 ounce draft. Flavor is quite impressive. Brewers description nailed it. The berries are long lasting through this sip with a nice hint of cinnamon and very mild vanilla and the finish. Tartness is moderate. Good mouthfeel. Hard to know it’s beer but it certainly does taste good!
5 oz. pour at the brewery in Kittery. Aroma is strong roasted malt, chocolate and vanilla (like ice cream sandwich) and lactose. Appearance is opaque black with finger width light brown fizzy head with poor retention and no lacing. Taste is lactose, ice cream sandwich and roasted malts. Mouthfeel is light-to-medium bodied with smooth, creamy texture, average carbonation and finish as taste. Overall, nailed what they were going for! Maybe a tad too carbonated?
5 oz. pour at the brewery in Kittery. Aroma is strong tropical fruit and pineapple with herb. Appearance is opaque light brown-dark yellow with nice sparkle, finger-width off white foamy head with good retention and splotchy lacing. Taste is strong tropical fruit and lighter herbal. Mouthfeel is light side of light to medium bodied with smooth frothy texture, soft carbonation and finish as taste Overall, good strength of aroma and taste.
5 oz. pour at the brewery in Kittery. Aroma is strong sweet nonspecific fruit with slightly less strong herbal. Appearance is opaque dark yellow-light brown with nice sparkle, finger-width off white foamy head with good retention and nice rings of lacing. Taste is strong fruit (berry?, tropical? stone?) and hay and grain. Mouthfeel is light to medium bodied with smooth texture average carbonation and dry crisp finish as taste with lingering yeast and moderate bitterness. Overall fruit is nonspecific but good strength of aroma and flavor. Good other features but a bit dry.
