Bottle. Pours raspberry white head. Nose and taste of sour raspberry in chocolate, oak, pink lemonade, red wine, light funky oak. Medium body. Soft carbonation. Short finish.

500 ml Bottle purchased at Julio’s Liquors. Sampled this slightly chilled. Ridiculous amount of carbonation on a slow pour Into a Weizen glass. After a few minutes to let the head settle, in the aroma I got a very light yeast nuance that isn’t of German decent, more of a Belgian like yeast with hints of herbal hops.

You should understand that this is an oxymoron of a style since true German Hefeweizens are NOT over hopped. I actually like the herbal and pine hop bitterness in this brew. However, I was looking for a German yeast strain. When you advertise a "German Hefeweizen " I really was expecting a German yeast element. That is not here. I enjoy the creativity the newer used but was let down a bit. Plus the body was thin and again lacked any type of yeast in the mouthfeel.

Growler from the brewery. Pours clear, rich brown with a creamy, tan head. Nice aroma, good roasty malts, dry chocolate. Light to medium sweet flavor, nice dark biscuits, cocoa, slight earth and dark berries. Light to medium bodied with fine carbonation. Nicely balanced to finish, more cocoa, light toasty sugars. Solid dark lager.

Bottle from brewery. Pours orange gold with white head. Nose/taste of lemon, bubblegum, spicy Belgian yeast, pear, lemon, doughy toasted bread and grass. Lighter medium body. Tasty and sessionable.

Draft at brewery. Pours cloudy yellow with white head. Nose/taste of hop, light malt, pine, cream and Belgian yeast. Medium body.

750 ml bottle with a date of 1/22/13. Snifter shows a hazy amber gold with thin lasting head. Aroma is fruity yeast and dusty malts.

Flavor is lightly fruity with candidate sugar, apricots and a light spice toward the finish. Even after the cellaring I still pick up a slight alcohol note. Lighter body with chewy, yeasty texture. Big yeast presence. Overall no flaws yet pretty forgettable.

Batch 1, April 2013, 750mL bottle drunk 4/6/14
Nicely bright copper-auburn body is topped by a medium amount of tan head that recedes fairly stedily to cover.
Really nice mix of soft acetic and malic acids in the nose, with light prunes, raisins and soft wood tannins taking some of the punch out of the acids. Reserved black cherry flesh-like notes and even just a touch of grape-like fruitiness. Works really well with the moderate acidity, light wood and caramel. Very easygoing. No alcohol noted.
Some light acetic acid in the mouth followed up quickly by light vanilla and caramel sweetness. Lots of wood tannin gives a very chewy texture and carbonation is mostly tight and engaging keeping the mouthfeel mostly light and not allowing too much of the tannin to build up. Very nicely attenuated, though with 9 months in the barrel, you’d expect it to be so. Perhaps just a little too tannic, which dulls the brightness just a bit too much. Some diacetyl is rather apparent, especially as it warms, but it dosent detract too much as it sort of works with the barrel character. Good. Could probably come out of the barrel quite a bit sooner.
