In the brewery, Head Brewer Brant Dubovick’s focus is on farmhouse ales and hop forward beers. His inspiration for Corridor’s beer program stems from rustic farmhouse breweries, as well as hop forward American trailblazers.

Tap at C&P. Biting US Saison/ Malty, peppery, overboard yeast tones. Drinks big for the ABV. Kind of antiquated for the style. OK.

Tap at C&P. Pretty sessionable ale thing. Not really nailing the style for sure, somewhat nutty golden malts. Straightforward, OK. Not really true to style but more inspired than most US examples. OK.

Tap at C&P. West Coast Simcoe meets NE IPA. Pretty bad ass Pale Ale at 30 IBUs. Unfiltered, thick. The NE yeast gives if a soft orange tinge. Hyper modern, well done NE IPA.

Growler from the source. Unfiltered copper-amber body, darker than expected. Not much of a head..just a residue. Classic salt and coriander notes, cheesy funky sour notes. The passionfruit is relatively mild, making me wonder if it might have been real fruit that was used...I’d wager it was extract still, but who I’m not sure. Pretty enjoyable.

Growler from Corridor and Provisions. Hazy yellow-tan body, patchy white head. Awesome modern minded Saison. Delicate and medium bodied. Lime tones indeed from the hops, very unique and delicious. Really well executed, smooth and easy on the palate. Great stuff.

Nonic pint draft at Corridor Brewery & Provisions in Chicago, Illinois. The pour is a slight haze golden yellow with a 1/2 inch white head that falls quick with nice lace. The aroma is bright citrus lemon with a soft bitterness and pine resin towards the back. The taste starts with the citrus, more of a grapefruit, the soft bitterness of the pine, resin and light cereal malt in the finish. The palate is medium with some mineral in the back. Nice clean and fresh IPA.

Growler for the source. My variation had Galaxy hops in it, and didn’t make any mention of Saphir? Unfiltered, cloudy yellow-tan-orange body. Fluffy white head. A really nice Wit. It surprises me that more US breweries are nailing this highly sessionable style. The galaxy hops are that out of line, they seem quite natural. This isn’t a hopped out Wit, it is classical and nails the style. Great balance, mouthfeel. Delicious.

$7.00 Saturday growler fill, awesome! Creamy, full bodied Stout. Big malt depth, respectable hop balance. Full bodied and really well executed. Doughy, rich, chewy, with a cooling hop balance. Approaches Black IPA, but the malts are all Stout. Classical, in a West Coast way. Really good.

Sampled from the tap at GTMW 2016. Pours a crisp clear light gold with a fluffy white head that lasts throughout the beer. Aroma has earthy grains, a good amount of straw and a light tart lemon note underlying. Flavor has lots of earthy wheat and straw with some tart lemon towards the finish.

Draft at the brewpub. Clear gold. Lots of lime and wheat on the aroma. Clean, salinity. Finishes with a lively feel.
