Description
A blurry picture of a sweet little farmhouse popped up on their computer screen. They smiled. A few short weeks later Melanie and Jeremy White were standing at the bottom of a curving drive, somewhat stunned to realise they had just bought over 100 acres of pristine Cape Breton farmland. Perched on a southern slope facing the UNESCO Biosphere Reserve Bras D'Or Lake, a hopyard was planted, and the land was certified organic. Water naturally rich in minerals was perfect for brewing. Construction began.

Ten years later, Big Spruce Brewing is focused on creating exceptional ingredient-driven beer. All of our ales and lagers are brewed with organic grain & hops, and we continually strive to keep giving you the perfect pint, every time.

Re-rate: Poured from 473mL can (thanks Jeff Brewnoser). Near black with full beige head. Earthy, roasty, decent. Improving the rating to 3.5. Mar 31, 2022 (7/3/6/3/13=3.2): Poured from 473mL can. Black with small beige head. Very roasty, slightly earthy, some cocoa. Aggressive, but decent.

Bottle at Black Christmas March 2022, vintage 2020
A bit dusty smell, roasted malts highlighted by the barrel. Lighter flavour than the Rye Whiskey and Glenora tasted just before, dusty malts, some roastiness. Simplistic.

Bottle at Black Christmas March 2022; vintage 2021
Dark brown colour. Not much aroma; good dark malts, dark sugar, but light body, evident alcohol. It's good, but with no complexity.

Slightly more smelly and less character than the Rye Whiskey version, it's a decent strong Brown Ale, with no soul.

Brown bottle, 650 ml, 2018 vintage, from, with and at Sébastien Bertrand (merci!), savoured on August 29, 2021; eye: dark brown, opaque, no effervescence, good sheet of beige head, no lacing; nose: whisky, light alcohol, malt, light medicinal, coffee, light sweat, rum, light molasses, light chocolate, slight coffee; mouth: whisky, light alcohol, malt, light medicinal, coffee, light sweat, rum, light molasses, light chocolate, slight coffee, light brown sugar, light maple, finale in rum with light presence of alcohol, full bodied, lightly below average carbonation, lightly sweet, alcoholic texture; in summary: quite good FRANÇAIS

Poured a black color with a medium sized tan head, slight cola color on edges of glass. Aroma was dark, roasted malts. Flavor was light roasted malts, with some creamy oats. Real smooth.

Dark brown. Medium head. On the nose, it's got a sticky, kind of clumsy smelling whiskey note overtop of what seems to be a really sweet impy. On the palate, better balance. A medium richness impy, with layers of chocolate and coffee. The whiskey lends some sugary richness, but it's balanced with more tannins and acidity. I'm digging this.

473ml can. Pours a slightly hazy orange-amber with a medium, foamy, long lasting, off-white head that leaves soapy lacing. Aroma of caramel malt, grapefruit peel, earthy yeast, light pine and herbal hops. Sweet flavour of bready caramel malt, orange, vegetal, light pine and spicy hops in a dry, mild bitter finish. Light to medium body with an oily texture and average carbonation. Meh.
