As of 5/24/25 Wasatch Brewery beers will no longer be brewed in Utah. They will be brewed in the Monster Brewing network.

“Where’s the beer? Where are the breweries?” Those were among the first thoughts Greg Schirf had after moving to Utah from Milwaukee in the early 80’s. Incredibly, drinking and brewing were all but forbidden. Greg took matters into his own hands and did what any self-respecting midwesterner would do: He started a brewery. Wasatch was the very first brewery in Utah – and one of the first craft brewers in all of the U.S. – brewing award-winning brews since 1986.

In 1988, Greg Schirf proposed another bill to the Utah Legislature making brewpubs legal in Utah and opened the first brewpub at the top of historic Main Street in the resort town of Park City. Wasatch continues to misbehave, turning out naughty beer after naughty beer year after year.

Bottle. Raisin, caramel and bready malt aroma. Brown with small head. Sweet raisin bread malt and and lightly bitter herbal flavor. Body on the lighter side.

Bottle. Vegetal caramel malt aroma. Amber with small head. Lightly sweet caramel and cooked vegetable flavor. Not so good.

Bottle: Pours cloudy, medium brown with a thin tan head. Caramel and cola aroma. Cola nut, chocolate, brown sugar, tastes... Fudge, toffee, baked muffins....malty. Very sweet. Very tasty.

From a 12 oz bottle shared in Park City UT. Pours a clear pale gold with an off white head. Biscuit nose. Light bodied. Light flavor. Crisp finish.

Bottle. Strong apricot and wheat malt aroma. Hazy pale yellow with moderate head. Lightly sweet apricot and wheat malt flavor. Nice body. Very pleasant.

Bottle. Prune, chocolate malt, and alcohol aroma. Dark brown with small head. Sweet raisin, cherry, caramel malt, and lightly bitter herbal hops flavor. Pretty nice.

On draft at the brewpub in Park City UT. Pours a hazy yellow gold with an off white head. Apricot nose. Flavor dominated by apricots with a hint if almonds. Light bodied crisp finish.

Bottle. Orange, wheat malt and orange peel aroma. Cloudy yellow with small head. Lightly sweet orange, wheat malt and mildly bitter lemon peel flavor. Not bad.

Bottle: Red-amber with a short, beige head. Peppery caramel scent. Taste is breadheel, caramel, salt, slightly vegetal. Not bad at first, but the green bean aspect gets stronger as it warms. A little odd.

Bottle: Pours pale yellow, cloudy, with a small white head. Aroma is lemon...citrus. Taste is grapefruit/lemon peel...dry biscuit. Very crisp and bright...like a hoppy Belgian White. No sweetness...just a focused, sharp citrus. Liked it.
