As of 5/24/25 Wasatch Brewery beers will no longer be brewed in Utah. They will be brewed in the Monster Brewing network.

“Where’s the beer? Where are the breweries?” Those were among the first thoughts Greg Schirf had after moving to Utah from Milwaukee in the early 80’s. Incredibly, drinking and brewing were all but forbidden. Greg took matters into his own hands and did what any self-respecting midwesterner would do: He started a brewery. Wasatch was the very first brewery in Utah – and one of the first craft brewers in all of the U.S. – brewing award-winning brews since 1986.

In 1988, Greg Schirf proposed another bill to the Utah Legislature making brewpubs legal in Utah and opened the first brewpub at the top of historic Main Street in the resort town of Park City. Wasatch continues to misbehave, turning out naughty beer after naughty beer year after year.

Bottle: Medium depth copper pour with a thin ring of sandy head. Nose is malty and sweet… lightly bready. Same translates into the taste, but with more emphasis on bready. Gets a little dry too. Faint florals and dandelion. Finishes a little metallic. OK.

12 oz. bottle. Born on date of 4/13/2013. Dark copper color with fast vanishing white head. Aroma is malts, dark fruits, syrupy chocolate, and a touch of earth. Mouth feel is on the lighter side (very thin) Soft steady carbonation. Flavors are good yet not as good as the true German Dopplebocks. Still all in all, very drinkable and true to the style.

Draft. Ruby-mahogany beer with a dark cream head. Rich malt and light dark fruit aroma. Rich malt and caramel flavor with toffee and light dark fruit. Medium bodied. Caramel/toffee lingers with dark fruit and light mineral notes.

Hazy gold pour - nose of floral and peppery hops, with a slight lemon and herbal tea note, complimented well by the soft tones of tangy wheat - flavor is not as balanced - a little overly bitter, grapefruit pith and lemon - moderate wheat, herbal character - minimal sweetness - mostly dry, with a crisp hop bite - decent, just slightly overly bitter.

A golden ale with a thin white head. In aroma, sweet fruity malt with grassy hops, OK . In mouth, a nice biscuit malt with grassy hops, Lager like, a bit of a corn adjunct, so-so. Shared with GRM.

A clear dark amber Bock with a thin mocha head. In aroma, a sweet fruity malt with light sulfur notes, strange. In mouth, a sweet fruity caramel malt with light grassy hops, licorice, OK. Bottle at Downtown Brew fest LV 2013.

On tap at Mellow mushroom. Pours a clear orange copper with medoum frothy white head that diminishes quickly. The aroma is cinammon, nutmeg and spice. Thin mouthfeel with strong spice upfront but very watery in the finish.

Bottle from bu11zeye. Pours dirty/hazy gold with a slight white head. Nice apricot aroma. Med body or nearly. Flavor is very apricot. Almost perfume level. Not getting much else. Good, if you need an apricot fix. Finishes dry/astringent to me.

Bottle (marked 11/02/12) that I picked up Superbowl 2013 weekend in Las Vegas (kept refrigerated since then). Large amount of yeast sediment noticed at the bottom of the bottle. Pours with a very mild haze over a deep bronze hued body with a thin head, poor retention and mild lace. Aromas are of melanoidins, grape nuts and an odd fruitiness that I cannot place. Cornbread and light leather. Flavors are of oxidation, cardboard, raisins, medium strong malt. Lasting leather. Low bitterness but some lasting in the duration. A bit husky, light alcohol. Suntan lotion. Some munich like toasted malt notes. Full bodied, medium carbonation. Sweet beer with a clean/crisp finish. I’ll assume that the date on the bottle is a best by and not a brewed on...
