Description
CIB Brewery is a small batch, production-only nano brewery located in Carson, Iowa. We are a farmhouse style brewery. This means all of our beers are fermented using proprietary yeast blends including Brettanomyces, Lactobacillus, and other wild yeasts. The end result of this brewing process is that all of our ales will be somewhat sweet and tart on the palate and be uniquely flavorful. All of our wild yeasts are harvested and cultured in the brewery in Carson, IA.

Bottle. Pours a near clear deep ruby amber brown with a tan head that dissipates to the edges. Aroma has notes of bread and dark grains with a bit of mustiness underlying. Flavor has notes of bread, sour red fruits, a bit of chemical and some chocolate. Doesn’t really come together for me.

Bottle. Pours a near clear dark brown with a yellowish brown head that dissipates to the edges. Aroma has notes of coffee and musty dark grains with a pretty present sour red fruit note. Flavor is similar with a bad combination of musty dark grains, creamy coffee and sour red fruits. Not really drinkable.

Sampled at Kyle’s tasting. Jalapeno and green pepper. It is sour, but it is a sourness that might come from rotting plant matter. Undrinkable and truly horrible stuff, in my opinion. Brown color, which isn’t even right for a stout.

Bottle. Pours a deep amber with a thick tan head that lasts throughout the beer. Aroma has a sour red fruit note with a bit of plastic and musty/earthy grains. Flavor has lots of red fruits up front that seem a bit off and are quite sour.

4 oz draft pour at Bier Station in Kansas City, Missouri. The pour is hazed brown with a well formed light khaki head. Nice lace left on the glass. The aroma is tart sour vinegar along with some malt presence. Wood is present as the beer warms. The taste is the sour brown ale, vinegar soft tart along with a good amount of black cherry. The taste is a bit less clean as it warmed. The palate is medium bodied, active carbonation and sweet sour finish. Decent.

Bottle with friends in Denver. Thanks pepsican! Cola, dark brown appearance with a brown head and decent retention. Vinous, tannic, dark cherry, apple, tomato, olive aroma. Tangy sour green olives, green apple, red grape, a bit woody, funky, yum a dum dum flavor. Maybe their best offering yet. Cheers, John!

@Pauls new condo Tasting-22oz bottle shared by jtclockwork-thin offwhite-hazy copper. A-tomato, hint of pepper, med malt. T-tomato quickly overtaken by heat/pepper, some acidic. Finish is pepper.

Bottle I brought to Paul’s tasting. Pours muddy brown with tan head. Nose of tomato juice, V8, garlic and tomato sauce. Taste is mostly pepper heat through some sour malt. Taste is actually quite pleasant. The nose not so much. Medium body.

Bottle brought by me to Monmouth Park tasting. I will gladly take credit for this. Pours cloudy amber with off white head. Nose and taste of canned spaghetti, tomato paste, unfermented wort, hotdog water, berry fruit, wood and caramel. Medium body.
