The vast and delicious cuisines of Central and South America hold a treasure trove of flavors, aromas and textures, much of which feels right at home in a well-made beer. We combine these ingredients and ideas with our own experiences to make subtle and deeply delicious beers, not mere novelty items. Each beer speaks with our voice and adds to the story. Draft - Sweet guava and a touch of tartness. Light hazy pink with a small white head. Light guava and a nice finish. Juice me than beer, but still good.

Draft @ Titanic. Pours slightly hazy golden color with white head. Bready and grassy aromas. Slightly sweet fruit flavor with cracker malt and grassy hops. Medium body with average carbonation.

12oz bottle. Unfiltered pink-red body. Really has a nice depth of fruit and spice flavor, but the body is a little thin and dry. Could go a little heavier on the guava. OK, but not as enjoyable as some of the other paletas. Kind of artificial but enjoyable aroma.

Purchased at Bottles and Cans in Chicago, IL; enjoyed at home on a nice late spring evening. I didn’t take tasting notes, but it was good. Nice and refreshing, very easy to drink, very abundant frothy head, unique pilsener, would have again. Now it’s time to enter more than 75 characters to this rating.

End of the keg and first of the keg. Filtered kind of thin watermelon body. Kind of more naturalish than most things I suppose. Medium bodied. Easy going. Mild. OK.

Glass, 5-ounce, draught, at the Goose Island Barrel House for the brewers (and media) supper for the Festival of Barrel-Aged Beers, savoured on November 19 2015; eye: golden, clear, no effervescence, ring of dirty white head, no lacing; nose: slight hops, caramel, malt; mouth: slight hops, caramel, malt, finale in caramel with light presence of hops, light-medium body, good carbonation, mildly sweet, lightly bitter, slick texture; overall: correct FRANÇAIS Verre, 5 onces, en fût, bue chez Goose Island Barrel House, souper pour les brasseurs (et média) pour le Festival of Barrel-Aged Beers, savourée le 19 novembre 2015; œil : dorée, limpide, pas d’effervescence, anneau de mousse blanc sale, pas de dentelle; nez : très léger houblon, caramel, malt; bouche : très léger houblon, caramel, malt, finale en caramel avec légère présence de houblon, corps léger-moyen, bonne carbonatation, moyennement sucrée, légèrement amère, texture coulante; en résumé : correct

Aroma was pretty good for the style - caramel malt, fruit, anise, hint of chili. Flavor falls down a lot along with body. In tasting I get marshmallow, burnt toast, light syrup, a little fruit, some bitter. Thin body. Wouldn’t drink again.

Passion fruit gives this beer an exquisite aroma, which sadly doesn’t carry over so well to its flavor. Flavor is a little sweet tart. Body’s a touch thin; Overall not too bad. Been waiting a long time for someone to use passion fruit in beer.

Aroma is wet grain and very ripe fruit. Flavor is similar to nose. I’m not too keen on pilsner’s that lean on the sweet side. This beer isn’t for me.
