Our philosophy is to brew beer with the adventurous craft beer drinker in mind—focusing on hand-crafted, small batches of beer, using local, seasonal and organic ingredients as much as possible.

Our beers are influenced mostly by Belgian and American craft styles, but the addition of premium ingredients such as fruits, spices or wild yeast strains sometimes causes the beers to defy traditional categories. Our barrel aging program features a wide variety of beers aged in wine and spirits barrels, ranging from a Rye barrel-aged Mexican Chocolate Stout to a wild yeast-fermented Saison aged on Missouri wine grapes in French oak wine barrels. We strive to always achieve balance with each of our recipes, making our beers exceptional with food.

At Chriso pre GBBF Shindig 2013. Pale gold lasting white head. Decent aroma some yeast some hop. Pretty decent.

hazy yellow loads of dry hopping. Simcoe? This is a pine tree of hops. Like I’m literally smelling a grapefruit and pine needles. taste is nice. pretty malty with loads of pine just more than you really need in a beer. I like it but couldn’t drink a glass of this.

Amber pour almost purple. Nose is pretty pleasant. lactic acid, grapes and very tannic. almost a rodenbach nose. taste is nice acidic with cherries and grapes. pretty floral and almost a rodenbach.

Bottle. Pours slightly muddy brown/auburn with very big and fluffy off white head. A bit of a gusher though not infected. Nose and taste of slightly roasted squash, nutmeg, cinnamon, maple and caramel malt. Lighter medium body.

Bottle. Pours cloudy pale yellow-gold with a small pure white head that dissipates with decent lacing. Aroma is yeast, floral, honey, pepper, spices. Flavor is the same, quite herbal, floral, lavender, coriander. Light sweet. Medium body, medium carbonation. Reprise on tap with about the same opinion.

Nice creamy longlasting head. Aroma is kind of strange fruity, caramel, nuts, yeast, chocolate, dough, toast, very ripe banana, coffee, grass. Taste is slightly roasted, dark malts, toast, burnt caramel, grass, very ripe banana, chocolate, roasted nuts, oak, wet hay, coffee. Medium bitterness, slightly dry mouthfeel. Very strange dunkel weizen, but it’s also kind of interesting.

Tap. Pours clear brown to hazel, shall beige head, decent lacing. Aroma is spiced, fruity, cinnamon, toffee, yeast. Flavor is quite spicy, ginger, medium sweet, minimal bitterness, fruit, toffee. Medium body. Interesting, but a bit o er spiced.

Bottle. Pours a thick and dark brown with little head and intense aromas of Nesquik and booze. Flavor is a nice mix of cocoa, roasty malt, a little vanilla and alcohol. It’s silky and a little viscous with a pretty good alcoholic warmth to it.

Draft at Beer Run. Pours a clear golden color with a large creamy tan head. Good head retention. Aroma of spicy, herbal hops and a musty note. The taste is herbal, spicy hops, medicinal bubblegum (kids amoxicillin), bitter finish. Medium bodied.

Capped 750 from Wine & Cheese in Clayton, MO. Pours clear orange/gold with a slight white head. Very light brett aroma. Med + body. Flavor is sweet. There’s fruit ester/yeast spice. The brett is extremely well hidden. Maybe there’s a small trace of earth, but nothing sweat sox/funky for sure. Beyond that it’s a very tasty and pleasing ale. I’d likely rate it higher, were it not for the langorous brett yeast. Bad, lazy yeast. Bad yeast!
