Our philosophy is to brew beer with the adventurous craft beer drinker in mind—focusing on hand-crafted, small batches of beer, using local, seasonal and organic ingredients as much as possible.

Our beers are influenced mostly by Belgian and American craft styles, but the addition of premium ingredients such as fruits, spices or wild yeast strains sometimes causes the beers to defy traditional categories. Our barrel aging program features a wide variety of beers aged in wine and spirits barrels, ranging from a Rye barrel-aged Mexican Chocolate Stout to a wild yeast-fermented Saison aged on Missouri wine grapes in French oak wine barrels. We strive to always achieve balance with each of our recipes, making our beers exceptional with food.

Draft at Churchkey. Maroon color, clear, tan edge head. Aroma of dark berries, cherries, grapes. Taste is softly sour currant, sourdough brown bread.

Draft at Churchkey thanks to Travlr. Poured a black color with a brown head. Aroma was milk chocolate, vanilla notes, sweet candy notes, malts. Flavor was smooth, chocolate character, vanilla notes. Very smooth and enjoyable.

Draft at Beer Run. Pours a clear copper color with a large creamy white head. Decent head retention. Aroma of bread, caramel, nuts, herbal notes and something almost soy like. The taste is bread, caramel, spice, nuts, hot booze. Medium bodied, weird notes, off balance.

Draft at Churchkey. Pretty much black, pretty brown head. Aroma of rich dark milk chocolate. Taste is vanilla, cocoa, malted milk balls. Nice.

Bottle. Pours a black with a dark brown head that lasts throughout the beer and laces slightly. Aroma has a strong mint note with backing bitter chocolate and roasted malts. Flavor starts with bitter chocolate but is quickly joined by a strong mint note with a dark grain backbone.

A hazed brown dunkel with a thin mocha head. In aroma, sweet nutty fruity malt with scotch barrel, walnut, dark fruits. In mouth, a sweet fruity banana with nutty notes, light solvent, alcohol warmth, ok.

750 ml bottle. Pour is an ever so slightly hazy gold with a massive fizzy head that dies very quickly. First approach reveals a lot of peach aroma with a grainy edge to it. The aroma seems to fade a bit as it warms, which makes me a little sad, but flavor is fantastically well done. The peach dominates and balances well against a slightly tart and grainy backdrop. Mouthfeel is light and refreshing and finish is slightly sour. Darn good stuff.

Draft. Black body with a frothy, beige head. Aroma of roasted grain, minerals, metal, grapefruit, bitter orange peel. The flavor is moderately sweet and lightly to moderately bitter. It finishes lightly to moderately sweet and moderately bitter. Thin to medium body, watery texture, lively carbonation. Coffee and hop bitterness. Resin and bitter chocolate taste. Too watery for the roasted malts, but better than lots of Black IPAs.

Refrigerated 75 cl brown bottle poured into a weizen glass. Pours translucent chestnut brown with big fluffy beige head. Some lacing, light body, medium carbonation, and tart aroma. Taste is estery banana, rich tart, some black walnuts, and a hint of earthyness which peaks out from time to time. This is good, original, and may be the best dunkleweizen I have had.

Bottle. Clear golden hued body with a lasting white head with good lace. Aromas are floral, light citrus, medium esters, and spicy hops/phenols. A touch of isoamyl acetate. Flavors are extremely bitter, a touch vegital, light citrus, not a huge amount of hop flavor, just mostly bitterness, medium esters. Very lively carbonation. Dry.
