Bottle @ Cafe Albert. Pours pitch black no head. Aroma of roasted malt, caramel, chocolate, light honey, vanilla. Flavor is light sweet, roast malt, caramel, chocolate, honey, light vanilla, wood, bourbon. Full body, soft carbonatio, sweet finish with warming alcohol. 081125

Aromaw: Dark fruits with bourbon and vanilla.
Flavour: Fruity sweet with vanilla and cocoa notes. Aftertaste is sweet. Mouthfeel is warm and oily.
Colour: Black with a fading head.

375mL bottle, as pictured, drunk 11/7/25.
Bright, juicy, funky with tons and tons of complex Brett. Plentiful barnyard is endearing. Oaky, but not too much so, with nutty wheat and stronger lactic elements, but no acetic. Very clean (clean as in not muddled. Not clean as in lack of funk), clear, focused nose.
Nice and malty with round oak and an excellent balance of Brett and lacto, the former being stronger, yielding vibrant fruits and notes of slight horse blanket, old leather and slight medicine. Just tending slightly sour, but never too much so. No cringing finish or enamel stripping here. Oak is round and Brett is vivaciously fruity.
It's weird to me that SP can quite readily make these really amazing lambic-like sours, and yet still chooses to make a bunch of enamel-stripping mega-acidic, sometimes acetic-bomb sours. This right here is better than at least half of the lambic producers in Belgium. They should really lean in to this.

Blend 3 bottle drunk 2/20/16. Hazy pour is extremely light white gold. White head atop is large but recedes to cover steadily.
Very mild nose shows soft lactic notes, funk, sweat and light sulfur. On top of that is a bright, perfumey brett character showing lilac and lime. Really helps brighten things. Wheat and bread behind it dont disrupt the delicateness much if at all. No alcohol or flaws. Nice restraint on the barrel.
Incredibly soft, floral and with a delicate wheat and honey character. The funk is developed but relaxed. Great attenuation and yet still malty with good tannic structure but no toastiness. Unbelievably drinkable. Could/would guzzle lots of this. Tight carbonation. Fantastic saison. Not just a sour/wild ale.

Wow that's juicy as shit 5 years on. Salinity, tannin, rich mineral and big, bold, strong berry, but yet, not hugely acidic.
Soft, rich, juicy, nicely dry and tart with a huge salinity, probably unintentional? But absolutely stunning. Old, aged wine-like with rich, rich, juicy, tart and gently malty notes throughout.

Pours bright golden with a small white head. Aroma: mango, apricot and fresh citrusy hops. Taste: citrus bomb, apricot and ripe mango. Fruity and sugary palate. Low bitterness. Medium bodied.
