Bottle at home as a last treat before going traveling for a long time. It’s certainly going to be the best I get for a while! Pouts black with no head. You know just from the pour that this one’s going to have a nice thick body. Lots of barrel in the aroma. Cognac has never been my favourite to be honest, but at the same time it does make a change. Bourbon barrel is amazing but it’s a lot more common. Oaky barrel comes out along with fruity cognac, boozy notes, chocolate and vanilla. With appropriately taken smallish sips the alcohol is subdued but present in its warmth. Just as the pour suggests, it’s pretty thick, a little oily. Great body. Certainly some warmth in the finish. Another damn great Side Project BA Impy, that’s certainly no longer for the cellar.

Bottle. Murky deep purple tinged brown. Slim off white head is leggy and lacing. Nose has nice barrel notes. Port up front. Lots of plum and raspberry. Some prune juice. More barrel notes showing cognac and sweet red wine. Taste is light sweet with a juicy bitterness. Decent beer up until the acidity kicks in hard and relentless. Renders it almost undrinkable. Almost.

750mL 2019 vintage, drunk 8/20/22. Good clarity in this blonde-to-light-amber beer with a small, white head showing moderate retention. Pretty straightforward mix of lactic-acetic acid with fruity brett, cherry, caramel-to-honey-like malt. Fruity, tart, clean, maybe a bit maltier than I'd like, with still somewhat aggressive acidity. For three years old I'd expect more mildness from the cultures. Still, it's fine, no problems. In the mouth it's richly, thickly wheaty with tart acidity leading to sweet cherry, light caramel, moderate vanilla and fruity, cherry-heavy brett notes. Malty, medium-full body, a bit aggressive/unrefined acidity and strong barrel tannin, though no remnants of the Chardonnay. Clean and no alcohol, but honestly quite pedestrian. Not exactly a hot take, but I'm sure this would be about .5 points lower if it didn't have the Side Project name. Maybe in 5 years this will be better? Would certainly happily test that theory.

Well, it sucks that you can only get a 750mL of this to drink on premise, but I didn’t come all the way here to not try this beer, so looks like I’ve got a whole bottle to myself. Oh woe is me....
Careful pour shows a bright apricot colored liquid that is sparklingly carbonated creating an off-white head that is well-retained. Good clarity to the liquid, leaving the sediment behind.
Damn, that is a fine, fine aroma that would turn a smile on the face of the best fruit lambic producers....It’s both funky, with nicely understated sulphur notes painting a very barnyard-esque picture, and polished, with reserved but ample oak character, homogenous acids and clear, bright, wonderfully authentic apricot notes. I’d be hard pressed to believe that this would score less than Fou Foune in a blind test, at least based on the aroma. No alcohol or flaw in the nose. Magnificent.
Oak and apricot at once square off in the flavor but before either can emerge dominant, a strong malt presence, both supple and sweet, arrives. Very rich honey notes balance poignant acids both from fruit and bacteria. Plentiful apricot flavor is garnered from start to finish and light oak dryness, coupled with soft funk and more gentle lactic acids sit on the end.
Tight carbonation and a supple maltiness make for a wonderfully soft, lightly spritzy mouthfeel right up there with the best lambics. The only thing I found at fault here was just a bit too much strength. It’s reflected in the above average sweetness and overall rich maltiness. It certainly never gets messy or boozy, but at the same time, the 8% is definitely felt. Even shaving off 1% abv here would work wonders, I think, but as is, this is still one hell of a beer.

Nose is quite prominent pinot noir with a good chalkiness underneath a brighter, but deep grape acidity. Wood tannin comes through with plentiful white bread and honey-like malt. Light brett and light lacto with more juicy wine and no alcohol or flaw on the end. Quite restrained for SP's saisons, which can be quite sour. Wow, this is incredibly light-bodied, though not thin. More pinot noir, soft chalk and light malt with a touch of honey and light acidity. Some brett, some lacto but mostly grape acidity, surprisingly. I'd actually like a little less, though I wouldn't call it overdone. Otherwise, clean and has no crude yeast esters/phenols.

750mL bottle, blend #6, drunk 9/21/23. Pours an unfiltered, deep maize-copper-golden. Massively carbonated, producing a staunch, frothy, off-white head. I can smell this stuff, through this initial 6 inch head almost across the room. Thankfully, it's much more Brett-driven, with stone fruit and mellower lactic acidity, than some of their other stuff (like CdC) and I don't get much, if any, acetic character. Very fruity, aromatic, clean and well-structured with heavy mineral, moderate wood/oak and lightly fruity, gentle wine character from barrel. Woody, fruity, with gentle white wine suggestions and massive amounts of mineral. Soft, deep malts with good attenuation, provide plentiful honey-like character. Healthy mix of stone fruit-like Brett character, with tropical hints, and juicy, tart lactic acidity that isn't too punchy. Acetic acid is not present, or low enough to not take part in the flavor. No heavy barrel tannin. This is bright, malty, refreshing and complex with a lovely mineral and fruit character and not overdone on the wine aspect. The bigger body, bolder acidity and higher abv move it away from a more traditional saison, but it's still charming and interesting in its own right. So strange how different and variable SP's saisons are.
