750mL bottle, 10 Year version, with the type of hops used for dry-hopping unlisted, drunk 2/17/24. Clear, bright blonde-golden. Small, rapidly-collapsing, white head. Delicate nose with the same oak and tannin from the base version, of course, with the addition of a little more, and much-needed, brightness, thanks to the hop additions. Clean and with a good amount of Sacch character to complement the light Brett. Soft, malty, nutty, tannic but not problematically so. A bit of tartness, but a good showing from fruity and pepper-laden Sacch. Definitely not carried away by the dry-hopping, its only gently adding a bit of herbal, citrus and mineral here. Clean, oaky, very drinkable and flavorful.

375mL bottle, blend #1, drunk 9/22/23. Straw-golden. Well-carbonated, creating a white head of moderate retention. Lovely Brett with a pinch of oak and lactic acidity, base malt-like honey character and other rustic grain notes. Very leathery Brett, not too tart, not citrusy. Clean. Tart, lightly lemony, green walnut skins and soft, gentle but lovely funk. Light white wine almost, with lip-smacking acidity and deep, comforting malts. Tart and juicy notes lingering. Clean and flavorful. Absolutely lovely.

375mL 2025 bottle drunk 1/27/26, as pictured.
Always look forward to a new entry in this fantastic series and it doesn't seem like it's going to disappoint. Nose is a luscious, aromatic, balanced mix of authentic, attenuated fruit and wonderfully-expressed, easygoing Brett. Add some rustic grain, a touch of wood and call it a day!
A bit more tart than usual, thanks to the specific adjuncts. Bitter may be more accurate than tart. But nonetheless, it's still lovely. Light but ample, biscuity texture with ample carbonation. Tons and tons of flavor with a near-perfect balance. Just enough bitter/tart to balance the supple malts. I hope they keep up frequent releases of this series.

Well, took a LOT longer than usual to get my latest proxy shipment, which is why i've never bought an IPA by proxy. So here we are at almost 5 months of age on this IPA....still smells great, albeit restrained with more earth/mineral/hard water coming through from the yeast. Candied citrus, light pine and grapefruit rind follow, but there's no chalk or resin from the Galaxy. Malts are sparse but supportive with biscuit and cracker and a touch of graham. Still smells inviting.
Sweet, candied citrus galore with rich honey from the malt before an earthy, mineral-laden, biscuity finish. Good malt depth and very nice dryness on the finish. Obviously all the flashy, fresh hop character has left, but the high quality of the brewing remains with remnants of interesting hop, lots of fun yeast and complex malt character. Will certainly revisit a fresh sample if I ever can, but this is plenty enjoyable as is. Turns out good beer is good beer, despite the age, even with IPAs.

Bottle: Poured a pitch-black color stout with a dark brown foamy head with some retention and some lacing notes. Aroma of chocolate notes with some deep toasted coconut notes and some residual sugar notes. Taste is also a mix of chocolate notes with some nice toasted coconut notes with just the right amount of residual sugar notes. Body is full with an oily texture and good carbonation with no discernible alcohol notes. Solid pastry stout with great flavours and great balance/drinkability.

Bottled 750ml. -at Goblet Zagreb, shared with Hrabren. Cloudy pale amber coloured, minimal off-white head, funky fruity and light acetic nose. Raspberry, fruity, light acetic, notes of oak and grapes with notes of wood in the finish. Alcohol is here but pleasant. Well done.
