Pours viscous black with no head. Aroma: plenty of cinnamon and bourbon barrels. Taste: maple syrup, cinnamon and rich chocolate traces. Mild sweetness. Beautiful warming aftertaste.

Pours clear orange with a mostly lacing white head. Aroma: bready malts, custard and caramel. Taste: bready malts and caramel. Easy going.

Pours pitch black with a small head. Aroma: plenty of bourbon barrels, chocolate and molasses. Taste: heavy bourbon barrels, rich dark chocolate and molasses. Medium sweetness.

Pours hazy golden with a lasting white head. Aroma: floral hops, mango and tangerine. Taste: kiwi and ripe mango. Light floral palate. Medium sweetness.

750mL bottle drunk 10/23/25.
Deep brass, good clarity. Small, creamy, beige head.
Big oak and lacto, not too acidic, it seems, though somewhat hard to tell from the nose. No acetic, so that's always a plus. Still has some good tannin structure and apparent malt, though no real sweetness/richness at this point. Very rustic with a pretty delicate (at least by SP sour standards) fruitiness lingering. Nothing off or problematic here nor can you tell its going on 8 years old.
Decidedly richly-malted with good oakiness and a good deal of acidity remaining. Lots of lacto, little Brett, little acetic. Impressive that this much texture remains. And there's a good funk and big minerality to it redolent of a lambic, which is lovely. It's still quite sour, true to Side Project, but not punishingly so, at least not at this point in its life.

Cloudy. The aroma has a nice bit of brett, good stone fruit, it has medium acidity, lighter than this brewery's norm. Decent juiciness, again peach accents. Good balance. Off-dry wood note in the finish.

Aroma: wild, funky, Brett, oak, some acidity.
Taste: along the same, nice funk and fruity character.
Overall: good one and less acidic than I expected. Maybe mellowed over time?

750mL bottle, Blend #1, drunk 10/20/25.
Touch of haze in this strawberry-blonde beer with a touch of rustiness. Small, off-white head sits at cover, bolstered by a good deal of carbonation.
Rich Chambourcin is loaded with tart acidity and rich minerality. Malt backing adds an almost dessert wine-like quality with barrel and hints of oxidation and sweetness.
Rich and vinous but with an excellent malt and barrel tannin structure that prevents it from being too thin or acidic. Juicy, tart, complex, high mineral grapes just work wonders in the flavor department. So much evolution of flavor as opposed to their younger grape sours (no big surprise, of course). Gets quite tart but never too much so, I don't think. Amazing amount of texture and flavor for 4%....It's a shame that their sours take sooo long in the cellar before they become really nice. But this one paid off for sure.

A black beer, no head. Aroma of massiv bourbon, vanilla, strong dark malt, coffee. Taste of sweet bourbon, vanilla, oak, strong dark malt, warming finish. Lovely.

750 ml bottle poured into a tulip. Hazy golden yellow with off-white head. Aroma has floral notes, light barnyard funk, hints of citrus. Taste is tart lemon citrus, light floral notes, some white wine, white grapes, barnyard funk. Medium body. Tasty stuff.
