Boozy, a bit roasty, cinnamon, maple and coconut. Not sure I love how the addjunks interact, maybe I'd leave the cinna out and obviously would greatly benefit from barreling. Very nice though.

Sweet, intense with cinnamon, maple syrup, toffee, cocoa and coconut. Quite heavy and thiccc.
Smooth, slightly sweetish and roasty with some barrel notes, hints of warming alcohol, bourbony toffee and vanilla. Surprisingly sweet, but tasty and complex slow sipper. Nice.
Medium body, boozy, bourbon, a bit sweet. Some roast, dry oak, a touch of licorice. Barrel a bit lack8ng especially for a double, but still very nice.
Thick, syrupy, sweetish, boozy. Malty, chocolate and bourbon, vanilla from the barrel, rich and smooth. Delicious.
Complex, slightly roasty and intense barrel heavy chocolate sauce, some vanilla, oaky wood, thicc body and cocoa. Great stuff.

750mL bottle drunk 9/12/25.
Clear, deep, blood-raspberry. Small, pinkish head.
Earthy, biscuity tea with juicy, well-attenuated raspberry. No sugar. Low oak, soft saison yeast and juicy, lovely, not sugary fruit.
Soft and juicy but very well-attenuated with a light oak structure but low oak in flavor. Soft tea astringency. Juicy raspberry through and through. Just enough oak and malt, but super attenuated. Refreshing and very tart.

Blend 5 draught at the brewery, 12/26/22. Lightly hazy, burnished brass. White head slowly to ring/cover. Peachy-lactic-laced fruity acidity. Deeper grains with some light toast from the barrel. Clean, no alcohol. Soft, fruity, lots of wheat softness and light nuttiness. Brett and lacto strong on the end with barrel tannin. For 5% this is much lighter and timid than the BdPays. But perhaps that's intentional. Still, nothing wrong here. Lots of lemon, wheat, Brett and moderate lacto. Nutty, almost. Champagne like with a creamy carbonation. Hmmm, maybe talking myself in to liking this more and more w every sip. If you look at it as a Pinot Meunier champagne of sorts....
