(Bottle) Golden colour, slightly hazy, with frothy white head. Fruity nose with citrus, grapefruit, funky yeast, gooseberries, green grapes and oak wood. Fruity, tart taste with notes of citrus, grapefruit, gooseberries, oak wood, barnyard, green grapes, green apples and pears. Low bitterness. More than medium body, dry. Tart, fruity and fresh (despite being eight years old). Very nice.

750mL bottle, blend #6, drunk 9/21/23. Pours an unfiltered, deep maize-copper-golden. Massively carbonated, producing a staunch, frothy, off-white head. I can smell this stuff, through this initial 6 inch head almost across the room. Thankfully, it's much more Brett-driven, with stone fruit and mellower lactic acidity, than some of their other stuff (like CdC) and I don't get much, if any, acetic character. Very fruity, aromatic, clean and well-structured with heavy mineral, moderate wood/oak and lightly fruity, gentle wine character from barrel. Woody, fruity, with gentle white wine suggestions and massive amounts of mineral. Soft, deep malts with good attenuation, provide plentiful honey-like character. Healthy mix of stone fruit-like Brett character, with tropical hints, and juicy, tart lactic acidity that isn't too punchy. Acetic acid is not present, or low enough to not take part in the flavor. No heavy barrel tannin. This is bright, malty, refreshing and complex with a lovely mineral and fruit character and not overdone on the wine aspect. The bigger body, bolder acidity and higher abv move it away from a more traditional saison, but it's still charming and interesting in its own right. So strange how different and variable SP's saisons are.

375 ml bottle, 2023 vintage. Thank you Clarkvv. Aroma is rich vanilla, Willet bourbon, cake batter. Wow!! This is reminiscent of old school BCBS vanilla.
Huge rich vanilla with brownie batter, and dough. Thich rich body with a decent Willett barrel in the finish. Jeez!!

Bottle shared by ClarkVV--thanks, Clark! Opaque, inky black with nice viscosity. Aroma is strong roasted malt, Blondie batter, vanilla, dark fruit/cherry, bourbon. Taste is strong vanilla, strong bourbon (a bit harsh initially), Blondie batter. Smooth texture, full bodied, soft carbonation, alcohol mostly hidden, finish as taste with slightest bitterness.

2023 375mL bottle from the Cellar, drunk 9/20/25.
Inky, dark, probably clear, ultra viscous, no head.
Yeah, that's a lot of vanilla, alright. Crazy, interesting Willett with its typical, atypical bourbon character. Spice, light lead and rich, liquor-like vanilla. Light fudge, hints of char, low sugar but very rich, soft and round. No booze.
Woahhhhh, that's wild. Definitely not fucking around with the Willett; it kind of tastes like cake batter with a half bottle of Willett dumped in to it. Body is solid, not syrupy and not sugary. Has attenuated quite a bit it seems. Vanilla is just a powerhouse here. The Willett is represented so well and there's char and salinity with no aggressivity or alcohol. I wouldn't hate a touch more syrupiness to the texture, but that's only because I've become used to it with Side Project.

Served at the House of Hops US beer tasting, Kuala Lumpur. Poured a slightly hazy yellow golden colour with a thin broken white head. The aroma is yeasty, big watermelon, cucumber. The flavour is moderate to light sour, with a fresh, somewhat light, crisp, fresh, watermelon, light salty palate. Medium to light bodied with average carbonation.

Bottle at the House of Hops US beer tasting, Kuala Lumpur. Poured a hazy golden colour with a thin white head. The aroma is funky yeast. The flavour is moderate sour, with a super dry, yeasty, peachy, acidic funky yeast, oaky palate. Medium bodied with average carbonation.

Floral, tartish and slightly funky with some juicy peachiness, hints of sourness and farmyardy notes. Solid, but nothing special.
