Description
The Schneeeule Brewery was founded in 2016 by Master Brewer Dipl. Ing. Ulrike Genz. After years of developing the recipe and thorough scientific study of the topic of the Berliner Weisse as a part of her Degree at the TU Berlin, in the spring of 2016 it was finally time and the brewery Schneeeule Berlin was founded. Finally, Berlin has a brewery producing original Berliner Weissr. The goal of the Schneeeule Brewery is nothing less than to give Berlin a piece of it’s culture back: Berliner Weisse. After both devastating world wars, the beer once known far beyond Berlin’s borders as the “Champagne of the North” is now almost only available as barely drinkable mass produced industrial beer. The reputation of the once National Drink of Berlin has been ruined. Master Brewer Ulrike Genz is doing her utmost to change this and to return the Weisse where it belongs; in every Bar and Restaurant worth its name in Berlin, and in a proper glass. All Beers brewed by the Schneeeule Brewery are bottle fermented with Brettanomyces and have matured in the bottle for at least 2 months. Just as it was done 150 years ago.

Sampled as Harald Berliner Brau'n Bier 1. Versuch 2023 Shortlived rusty cream head over veiled cola-coloured beer, looking well-carbonated. Clear, if brown-orange yeastrim on the neck. Lactic acid, wood, red fruit, fruity esters. Nose almost straight as from Roeselare. Very sour, but all lactic. If there's acetic, it remains below the recognition treshold. Again wood and fruity esters, some malonic acid maybe. Overripe strawberries. Tart, puckeringly acidic, ultra-dry. Medium bodied at best, very well-carbonated. The label mentioned the lactic bacteria added. Well, those had a party.

Bottled. An unclear golden beer with a white head. The aroma has notes of lemons, yoghurt, and a bit of fruit. The flavor is sour with notes of lemons, wheat, yoghurt, and a bit of dusty hops, leading to a tart finish. 7/3/8/3/15 Thanks yespr

75 cl bottle. Pours hazy orange with a fizzy white head. Aroma is milky fruity. Sourish. Milky. Fruity, lingering sour and smooth sweet. Mellow. Fruity far finish.

Jens Smagning 26/02/2026 - tart sour fruity with some hoppy and wheated malty notes, foral and herbal accents, medium body and acidity, sour fruity and herbal close.

Bottle that Jonas & Ursula brought along from the crowdfunding box, it's been here for more than 10 months, cheers you two! Had this Friday 13th February at the Manglham 2nd Winter Tasting listening to The Veldt - Marigolds. Jonas cooked Pasta Carbonara, it was fab'. Pours hazy brown. Tart and tangy, sour yet not overly sour it's not really my thing but it tastes good, fuzzy and zappy, good. Score 7.4

Big bottle. Hazy red amber, low offwhite head. Medium body, chewy dry, fizzing. Grapes, funky notes, wood, leather, ripe oranges, berry fizzlesticks. On top of light bready roast, Brett in a way I have not tried before.
Amazing, a shame, I want more of this 😭

0.75l bottle at the Mangled Ham 2026 tasting, thx Jonas! Muddy brown body, no head. Some caramel, raisins and saliva in the tart aroma. Lean, dry, citric taste, orange, bretty, low raisins, but juicy, immensely drinkable, just tastes extremely fresh! Huge respect for this one!

Bottle, shared with Marko, Loz, Fin and Jonas. Murky deep chestnut. Funky, bretty, sour and fruity nose. Long, warm and sour. A malty bready base, and on top fruity light tart spritzy notes. I didn't know this could work, but it works. It's a good beer. And a good evening.
