Mixed fermentation brewery specialising in locally sourced, heavily fruited and hop-forward beers with a sense of place and seasonality.

Big flavours and bright colours, that’s what you can expect from Vault City Brewing. We’re the UK’s biggest sour beer producer and we’ve been making fruit-forward, modern sour beers in Edinburgh since 2018.

Our mixed fermentation style and distinctive house culture create the perfect base for real fruit ingredients, which gives our beer its intense aroma and flavour, not to mention the eye-catching colours.

Draft. An unclear red beer with a lazing pink head. The aroma has notes of red currant, funk, brett, and malt.The flavor is sour with notes of red currant, lemons, funk, and malt, leading to a tart finish.

Lots of coffee pulp and fruity English hedgerow flavours. Lots of depth. Drunk like a Cascade sour. A little dirty and acidity but in a very good way which I enjoy. Lots of balance and character. Excellent.

Bottle from Westhill SS. It pours cloudy ludicrous purple with a thick purple head. The aroma is rammed full of berry, blackcurrant and blackberry, tangy, jammy, Victoria sponge cake, some creaminess and ribena. The taste is crisp, bright and tangy, massive ribena character, jammy, tangy, crazy juicy, puckering, layers of blackcurrant, blackberry cordial, hit of spice, granny smith apple in the backdrop, victoria sponge cake and raspberry pip with a dry, tangy blackcurrant finish. Medium body and moderate carbonation. Ludicrous turbo ribena. So much fruit. Fun stuff.

Bottle from Eltham Wines. Deep amber/red pour with a white head. Nose is strawberry jam, red cherries, lots of tart red fruit. Taste is strawberry sherbet, strawberries & cream, cherry drops. Just a light tartness. Dangerously drinkable given its ABV. Excellent and exceedingly tasty 'sour'.

Bottle from The Beer Cave. Murky golden body with a thin white head that fades. Steady carbonation. No lacing. Aroma of lemon and melon. Flavour of orange sherbet and a light sourness. Medium body with a slick texture. Soft fizz. The sourness is subtle enough that the focus is very much on the hops.
