Mixed fermentation brewery specialising in locally sourced, heavily fruited and hop-forward beers with a sense of place and seasonality.

Big flavours and bright colours, that’s what you can expect from Vault City Brewing. We’re the UK’s biggest sour beer producer and we’ve been making fruit-forward, modern sour beers in Edinburgh since 2018.

Our mixed fermentation style and distinctive house culture create the perfect base for real fruit ingredients, which gives our beer its intense aroma and flavour, not to mention the eye-catching colours.

Light haze on this gold beer, small pale cream colour head. Light but pretty smooth palate, decent fine minerally carbonation. Smooth light malts, a nice light creamy sweetness. Nicely piney citric hops but somewhat outmuscled by lemonade and lemon marmalade. Finish gets a little watery thin (hey it's a SIPA, less for your money everytime) and leaves a light lemon acid burn in the aftertaste. It's alright but I'm swallowing the hype even less than I am swallowing this beer.

Bottle from Vault City. It pours a lovely golden - blonde with a big fluffy white head. The aroma is fresh and bright, lovely sweet elderflower upfront, daisies, summer meadow gooseberry crumble with custard, must and funk and floury bread. The taste is crisp, dry and puckering, fresh and floral, bright elderflower, sherbet, puckering gooseberry, hint of white grape, lemon peel, pomelo and light floury bread. Finish is dry and floral. Medium body and moderate, fluffy carbonation. Exquisite. Fresh and vibrant. Moreish and quaffable. Lovely stuff.

Bottle, 7%. Deep ruby red with medium pink head. Aroma is malt, berries, fruit, cherry and lemon. Flavour is malt, fruit, hops, medium sweet, citric, lemon, sour, berries and medium dry.

Bottle at home in Hackney - sourced from HB&B. Pours slightly unclear blood red with a frothy, pink head. Super juicy raspberry character throughout, with moderate tartness, hints of seedy bitterness, light alcohol kick. Almost jammy at points. Medium bodied with delicate, massaging carbonation. Fairly clean on the finish, more rich and vibrant raspberry character. Delicious. Don't think there are too many beers as drinkable as this at 8.5% ABV. Lots of fun.

Crowler from Mig & Ølsnedkeren, had @ Home. Pours very deep red with a creamy pink head, lacings. Aroma of light sourness, malt, youhurt rich tart fruit, red berries, berry skin, cherry. Flavor is sweet, lightly sour, malt, rich red berries, blackberry, Ribena, berry skin, tannins, youhurt, cherry. Medium body, soft to average carbonation, light dryish and light acidic finish. Dont get any almond. 030520

375ml bottle. Murky orange, small white head. Aroma of peaches/nectarines, vanilla. Taste is sweet and sour, peaches and nectarines, loads of vanilla making it a fair bit sweeter than I expected. Very thick for the abv, lovely smooth mouthfeel. Another excellent fruited sour from VC.
