Description
Pilot was born when Matt Johnson and Patrick Jones met while studying for masters degrees in Brewing & Distilling at Heriot-Watt University in 2012. A shared view that there was something different to be done in brewing – not traditional real ales, but not just another U.S. craft beer clone either – led to home-brewing together, which eventually led to buying a second-hand brewhouse and moving to the heart of cosmopolitan Leith, commencing brewing right at the end of 2013.

We’ve never done things the easy way. We dismantled the plant ourselves. We moved it to Leith and rebuilt it ourselves. We dug out the drainage (pro-tip: pay real men to do that), installed the flues and built the cooling system ourselves. We design, brew and drink the beer ourselves. We are Pilot.

On tap at BrewDog Clerkenwell. Black beer lasting tan head. Very coffee some milky ness. Lots of dark coffee. Smooth in mouth. Very decent and not too much lactose.

Keg at the Hanging Bat. Pours hazy golden with a thin white head. Lots of citrus on the nose, pine, resin and something savoury. Taste is more citrus, resin. Lovely clean finish.

Keg at BD Soho. It pours hazy reddish - amber with a medium white head. The aroma is rich, bitter - sweet, piney, resinous, spring onion, slightly herbal, stewed orange, peach, marmalade and a touch of toffee. The taste is big, bold, punchy bitterness, drying, piney filth, resinous, grapefruit, orange peel, lychee, bit of toffee, peppery spice, bit of booze and oily character with a lingering bitter - dry finish. Medium body and moderate carbonation. Punchy and flavoursome. Maybe a touch heavy, but I am being picky. Good stuff overall.

Keg at Brewdog Soho, London. A hazy golden/orange coloured pour with a medium white head on top. Hoppy, orange, caramel on the nose. Tastes hoppy, orange, caramel, bitter/ sweet. Very nice DIPA. I’m a big fan of Pilot, good to see them at GBBF the last couple of years.

Keg at the Brewdog Camden. A hazed golden orange coloured pour with a lasting creamy white head. Aroma is big juicy citrus, candied orange, zesty orange, tangerine, little hot alcohol. Flavour is semi sweet Base malts with hints of caramel malts, hop is big and assertive orange and tangerine citrus, pine needle, little apricot jam,. Aggressive, relatively clean bitterness. Palate is sticky hop resin, chewy, moderate carbonation, little creamy. Grainy finish. Big and bold.

On keg at the Red Squirrel. Appearance - hazy golden amber with a nice fluffy head. Nose - big orange and tropical notes. Taste - more orange plus apricot which is the note that lasts. Some resinbut within limits of tolerance so fine. Palate - close to medium bodied with a creamy texture and a long dry finish. Overall - very good.

On keg at the Red Squirrel. Appearance - murky brown. Decent lacy head. Nose - toffee, Shreddies and candy sugar. Taste - as per nose. Toffee apple. Palate - close to medium bodied with a creamy texture and a fairly good finish. Overall - good but would like more Belgian yeast tang on the finish.
