About
Jem Ham is Cheddar Ales' Head Brewer and Managing Director. Cheddar Ales, he started Cheddar Ales with the intention of making the best real ales in the local area. It began its artisan brewing activities in October 2006 and is based at Winchester Farm on the edge of Cheddar village, near the famous Cheddar Gorge.

We currently have five fermenting vessels, each one capable of holding 21.5 brewery barrels of beer, or around 6,150 pints. This gives us a weekly brewing capacity of around 30,000 pints, which may sound a lot but is certainly 'micro' in terms of the brewing industry. By hand-crafting such relatively small volumes, Cheddar Ales can ensure that character, consistency and quality lie at the heart of all our beers.

Cask (handpump) @ GBBF 2012, Great British Beer Festival, London Olympia, Hammersmith Road, London, England W14 8UX.Clear medium amber orange colour with a small to average, frothy, fair lacing, mostly diminishing, off-white head. Aroma is moderate malty, toasted, caramel, moderate hoppy, grass, citrus, orange - citrus. Flavor is moderate sweet and bitter with a long duration, grass, citrus. Body is medium, texture is oily, carbonation is soft to flat. [20120808]

500ml bottle at 4.7%. Pours very dark brown with a medium, frothy head. Aroma is burnt, bitter coffee and dark fruits. Taste is faint, dark fruits and liquorice. Coffee on the aftertaste.

Bottled from Corks of Cotham. Amber with a decent, off-white head and moderate carbonation. Aroma of cereal malts and orange blossom. Flavour had robust, slightly sweet malts and citrus fruit, before leading to a decent, bitter finish. Enjoyable.

Cask at the Griffin Inn, Bath. Pours clear, dark gold with a fine, frothy, off-white head. Bready malts on the nose with hints of honey. Light to medium sweet flavior with doughy bread, notes of toffee and butterscotch, ripe fruits, citrus, mellow leafy bitterness. Light bodied with fine carbonation. Good condition. Just a touch more leafy hop kick to finish, with further bready malts and toffee, along with lightly sugary, ripened fruits. Very nice bitter.

Cask at the Catford Bridge Tavern. Dark amber pour with a white head which soon dissipates. Malt and caramel nose. Caramel and raisin flavour with light chocolate notes. Malty finish.

Gravity dispense at the Prince of Wales, Farnborough BF - 12/10/12. Dark mahogony brown with a creamy tan head. Nose comprises roast malts, toffee and a little smoke. Tastes of milk chocolate, light roast malt, toffee. Medium bodied with moderate carbonation and a smooth finish. Not a watery one as some 4% porters can be, so overall a decent drop.

Bottle from Darts Farm. Hazy deep golden, small head. Light and crisp, elegant malty base in the bacground and lots of fresh, grassy-resiny hops that also have a touch of citrus fruit.

Cask@The Hillgrove Porter Store, Bristol. Deep amber colour with a small white head. Aroma is fruity, wooden, vanillaish with some mild nutty and bitter grassy and floral notes. Flavour is nutty, wooden, caramelly with some grassy, floral and fruity hops.
