Patrick picked up homebrewing as a hobby, later to become an obsession, as a distraction to the banality of law school. Soon he was winning numerous awards for his beers and driving his wife, Rachel, mad with the messes that he would leave on the kitchen stove. Upon finishing school, he took it upon himself to draw up a business plan rather than study for the California Bar exam – a risky endeavor that shows through still today in the creative, genre-tilting beers that The Bruery prides itself on.
The Bruery is founded on the excitement that Patrick felt in those first years of homebrewing and we continue to strive for that same passion in every aspect of our business today. We never stop challenging ourselves to develop distinctive & imaginative beers, constantly pursuing improvement in all that we do. We brew dozens of original beers each year with our list of ingredients and inspirations growing perpetually. Our collection of oak barrels has also become a primary element of our brewery. Nearly half of our beer is aged in wine or spirit barrels bringing forth flavors reminiscent of the Belgian countryside or classic American distillers.

A lot of bitter, not enough coffee for me.

Panda at home, thanks to Kenneth, 21/04/2025.
Pitch black topped with a tan cap that settles as a swirl.
Nose is big, ballsy, boosty, molasses, spice, dark malts, fruit cake mix, honeycomb.
Taste comprises chocolate melt, toasted brown sugars, honey dollop, coconut fudge, molasses, booze.
Full bodied, oily viscous feel, semi drying close with a big bollocking boost.
Solid punchy pastry ... tastes way sweeter than it smells but maintains a balance and sips fine for 19%.

Bottled 750ml. -at Goblet Zagreb, shared with Marko. 74 euros for the bottle. Pitch black coloured, minimal brownish head that went away fast, chocolate, barrel and light alcohol in the nose. Roasted malt, chocolate, barrel, some alcohol and licorice with bitter chocolate finish. Quite nice.

0.75l bottle, with Ogi, Veco, Brada and Ivan P. Oily black-brown body, no head. Chocolate, cocoa, cookie aroma, soft, boozy, bit dusty barrel. Lean, dry taste, raisins, heaps of licorice, extremely well hidden alcohol, some roasty notes, light tartness, bitter finish. Not an enormous fan, but respect this.

Hope this gets better as it warms up. I would have probably dumped it if at a fest or share but it is a member bottle (prob cost $25-30) so I am pushing thru the whole 750!

The Bruery Vermont Sticky Maple 11.3%
BBA Imperial Stout with maple syrup
Deep black with a thin wispy dark beige foam. Big maple and bourbon caramel aroma. Full soft body with a slightly scratchy mouthfeel.
The taste is totally sticky maple, caramel, burnt coffee and a bit of bourbon heat.
Very sweet, it’s not as nicely balanced as founders mackinac KBS but this has a nicer body.
