Patrick picked up homebrewing as a hobby, later to become an obsession, as a distraction to the banality of law school. Soon he was winning numerous awards for his beers and driving his wife, Rachel, mad with the messes that he would leave on the kitchen stove. Upon finishing school, he took it upon himself to draw up a business plan rather than study for the California Bar exam – a risky endeavor that shows through still today in the creative, genre-tilting beers that The Bruery prides itself on.
The Bruery is founded on the excitement that Patrick felt in those first years of homebrewing and we continue to strive for that same passion in every aspect of our business today. We never stop challenging ourselves to develop distinctive & imaginative beers, constantly pursuing improvement in all that we do. We brew dozens of original beers each year with our list of ingredients and inspirations growing perpetually. Our collection of oak barrels has also become a primary element of our brewery. Nearly half of our beer is aged in wine or spirit barrels bringing forth flavors reminiscent of the Belgian countryside or classic American distillers.

Fat på Taphouse med P.N. Doftar mycket vinöst med svarta vinbärsblad. Smaken som doften mycket vinös o drar åt svarta bär. Lååång smak. God men lite för vinös för dunder betyg.

Keg at Oliver Twist, Stockholm. Near black, minimal head. Caramelly chocolate aroma with some madeira. Very sweet with full body and syrupy mouthfeel. Toffee and treacle, milk chocolate and pear brandy. Boozy mid bitter finish.

Near opaque dark brown beer, small tan head that doesn't last long despite the audible fizzing of the bubbles. Inevitably a slightly viscous palate but balanced by very good fine minerally carbonation. Not often you get a brew pushing 20% that is this well carbonated. Soft but rich dark chocolate malts, some intense chocolate liqueur. A little milk chocolate where the vanilla intersects. Honey obvious but, not that sweet, like a honey brandy or something! The other adjuncts are there but background characters, coconut, candyish strawberry (especially on the back end). Raisan the most well buried. A little coffee tries to peep through. Some bitterness and alcohol spice on the finish. Bruery still pushing the boundaries of what a beer can be. Remarkably drinkable for it's heavyweight abv.

Smooth(!), warming and slightly roasty with some cocoa, chocolate, hints of molasses, licorice, vinous port and earthy woody oaky notes. Surprisingly thin body, a bit boozy finish.
Boozy (gee really?), rich, thin body. Bourbon on top of bourbon, chocolate, raisin, hefty. Still smooth and balanced, delicious, awesome.
