Patrick picked up homebrewing as a hobby, later to become an obsession, as a distraction to the banality of law school. Soon he was winning numerous awards for his beers and driving his wife, Rachel, mad with the messes that he would leave on the kitchen stove. Upon finishing school, he took it upon himself to draw up a business plan rather than study for the California Bar exam – a risky endeavor that shows through still today in the creative, genre-tilting beers that The Bruery prides itself on.
The Bruery is founded on the excitement that Patrick felt in those first years of homebrewing and we continue to strive for that same passion in every aspect of our business today. We never stop challenging ourselves to develop distinctive & imaginative beers, constantly pursuing improvement in all that we do. We brew dozens of original beers each year with our list of ingredients and inspirations growing perpetually. Our collection of oak barrels has also become a primary element of our brewery. Nearly half of our beer is aged in wine or spirit barrels bringing forth flavors reminiscent of the Belgian countryside or classic American distillers.

From tap at Pizza Port, Carlsbad. Pours almost black with a small orange glare and a lacing white head. Mild spiced and roasted malt flavour. Spiced and malty roasted flavour. Lasting spiced flavour and slight roasted. Not my style, too spiced.6-3-4-3-10=2.6
From bottle, blind #2. Pours hazy dark brown with a small off-white head. Yeasty, roasted malt, caramel and light acidic touch in the aroma. Plastic, leathery and spiced flavoured. Mild acidic touch. Spiced and roasted finish. Lingering roasted malt flavoured finish.6 3 6 3 13 = 3.1

Sent in a photo to be uploaded. Pours with a small white head that covers a hazy orange body. Aroma of coriander, saison spices, hops and orange. Taste is yeasty, a bit meaty, with oranges, honey and spiciness. Alcohol adds a creaminess, and is well hidden. Dangerously drinkable. Slightly syrupy with light carbonation. PLENTY MORE AVAILABLE still.
Very good, but I don’t think this one is aging super beautifully at two years in (unlike the barrel aged version). Tons of very sweet honey biscuit and signs of oxidation after nearly two years. Still a good brew but getting a bit harder to drink...I have traded or consumed all but one of my bottles I think.

750 ml bottle purchased mail order from Joey at South Bay in Imperial Beach, CA. Bottle is numbered 1311/2157, and was signed by the brewers. Pour is hazy orange golden with a one inch white head. Aroma of sharp hoppiness, and Belgian yeastiness. Plenty of rich apricot and floral goodness present as well. Taste is bright and harsh initially, quite a bit of bright Saaz hops, and decent shot of booze. Not as clean as I imagined it would be from the nose. Apricot and some black pepper spiciness feature in the aftertaste. This was nice, but from the nose I imagined it would be super nice. I am realy impressed with this brewery.

750 ml bottle purchased mail order from Joey at South Bay in Imperial Beach, CA. Pour is cloudy hazy golden yellow with a perfectly white one inch head. Aroma of floral hops and earthy grassy hops. Soft fruitiness present as well, strawberry or Kiwi. Very full and engaging nose. Lovely. Taste is flowers, bright hoppiness and wheat. Aftertaste is full of the hay and yeastiness. Palate is dry and on the full side for a Wit, must be the oats. Nice beer.

On tap at Stone. Pours a clear, yellow body with not much head at all. Nice coriander and (to me) celery spicy aroma. Taste is very spicy, with celery, clove, lavender, and coriander. Aroma and taste is similar to a couple of the Unibroue brand. Dry mouthfeel with decent carbonation. 637414:3.4
Rerate: From a growler. Pours a hazy yellow with a long lasting white head. Aroma of coriander, honey, citrus, lavender and bready yeast. Taste is a bit more on the spiced side. Dryish mouthfeel with lively carbonation. 747415:3.7

Cloudy yellow. Big flowery, coriandery, malty aroma. Hugely, assertively peppery with a big whack of coriander. Lacks all semblance of subtlety. Big dry finish. A distinctive wit.

Dark brown. Smokey dark fruits highlight a complex aroma. Fruity-yeasty character with some dark malts and raisin.

Draught Stupendously huge yellow-brown head over hazy dark-brown beer. Very strange nose with yeast off-aroma’s and a lot of coriander. Coriander, and black malts and sweet chocolate-like flavour. Absolutely terrible. Slick, velvety MF, thick, worts-like. If the Californians really think we make this kind of beer, our brewers ought to be stopped immediately by health services...
