Patrick picked up homebrewing as a hobby, later to become an obsession, as a distraction to the banality of law school. Soon he was winning numerous awards for his beers and driving his wife, Rachel, mad with the messes that he would leave on the kitchen stove. Upon finishing school, he took it upon himself to draw up a business plan rather than study for the California Bar exam – a risky endeavor that shows through still today in the creative, genre-tilting beers that The Bruery prides itself on.
The Bruery is founded on the excitement that Patrick felt in those first years of homebrewing and we continue to strive for that same passion in every aspect of our business today. We never stop challenging ourselves to develop distinctive & imaginative beers, constantly pursuing improvement in all that we do. We brew dozens of original beers each year with our list of ingredients and inspirations growing perpetually. Our collection of oak barrels has also become a primary element of our brewery. Nearly half of our beer is aged in wine or spirit barrels bringing forth flavors reminiscent of the Belgian countryside or classic American distillers.

Thanks to bgramer for this - very hazy, fizzy golden - slightly earthy aroma, medium sweet, with flowers and honey - fairly light bodied for a tripel, but there is a decent mix of floral complexities, bittering herbs, balancing honey sweetness - some light apple fruitiness - not getting any basil, which I really wanted after reading the label - anyway, a bit too light, and not as complex as I expect my tripels to be - nice for what it is, though.

Thanks to goldtwins for sharing - effervescent, cloudy gold beer - huge herbal and floral aroma, with notes of orange peel, but nothing is overpowering - rich yet subtle - very full carbonation in the mouth - nice and dry, with flavors of citrus, melon and tropical fruits - slight herbal bitterness, with sage, and possibly rosemary - lingering white wine-like tannins in the finish - beautiful beer.

Thanks to beerbill for sharing - huge explosion of foam when opened - fizzy, short-lived head - doughy aroma, with notes of chocolate-covered cherries and a bit of spice - full in the mouth - earthy and toasty - a bit chalky, with a decent amount of cocoa and a bit of tartness, orange peel - some lingering cherry flavors and yeastiness - not any really apparent spice/coriander - decent, but not memorable.

Bottle shared by somone at the Woodshop Quad. Nose of light caramel, fruit and sugary sweetness. Hazy brown with a small beige head. flavor of caramel, toffee, and spiciness.

750 ml bottle courtesy of heemer77. Pour is cloudy brown ruby with a one inch tan head. Aroma of big jasmine spiciness, some dank earthy thing going on. Nice, interesting full nose. Taste is acidic caramel wheat, some grainy oats. The finish has dried fruit, prunes or raisins. Palate is silky, medium coating. Highly carbonated. Nice beer, though I was hoping for more in the taste after the nice nose.

On tap. Pours with a foamy, off-white head and a hazy dark amber body. Good lacing. Tons of citrus and spicy hops with a bit of fruit. Surprised at the ABV. Taste is a bit of Belgian yeast, earthiness, and spicy hops. Lively bubbles and a bit dry. Very good, stuff.

Bottle: Poured a deep golden color ale with a large off-white foamy head with good retention and good lacing. Aroma of sweet malt with some candi sugar traces and a nice spicy yeast with some subtle alcohol ester. Taste is a nice mix between some candi sugar and some peppery yeast and some light alcohol traces. Full body with great carbonation. I must admit to having been really surprise by how well this beer was drinking and apart from a lack of fruity ester I thought it was a great realization.

Bottle at Mekong on 07/19/2009. Dark black body with a large rocky off-white head. Sweet chocolate aroma with light roast and spice. Big chocolate flavor with some faint roast and a good spicy background and a dry finish. Medium body with moderate carbonation. 7/5/8/3/16 - 3.9 Bottle on 07/18/2009. Hazy dark brown body with a large frothy off-white head. Sweet fruit, light yeastiness, and some dark malt aroma. Sweet raspberry and roast malt flavor, some dark malt. Medium body with moderately high carbonation. 7/4/7/3/13 - 3.4 Bottle on 11/30/2008 at the 3rd Annual Richmond Industry Gathering. Murky dark brown body with a medium tan head. Big spice and fruit aroma. Sweet caramel and dark fruit flavor with some light chocolate. Medium body with moderately high carbonation. 7/3/7/3/14 - 3.4

Capped bottle (2009/2157). Bright copper color with not much head. Warm aromas of light seeded fruit and some candi. Medium body with very light carbonation. It’s a bit peppery/spicy with heat, light fruit, maybe some caramel or rye. It is somewhat sweet, and finishes rather mildly. Quite satisfying.

Pours gold with copper hues and big bubbled off white head. The aroma seems a little mild with some spices, apples and yeasty goodness. The taste is initially punctuated by big carbonation bringing lots of light skinned fruitiness and apples followed by yeasty spice, apricots and vague herbal notes. Very fruity overall, pretty nice tripel.
