Patrick picked up homebrewing as a hobby, later to become an obsession, as a distraction to the banality of law school. Soon he was winning numerous awards for his beers and driving his wife, Rachel, mad with the messes that he would leave on the kitchen stove. Upon finishing school, he took it upon himself to draw up a business plan rather than study for the California Bar exam – a risky endeavor that shows through still today in the creative, genre-tilting beers that The Bruery prides itself on.
The Bruery is founded on the excitement that Patrick felt in those first years of homebrewing and we continue to strive for that same passion in every aspect of our business today. We never stop challenging ourselves to develop distinctive & imaginative beers, constantly pursuing improvement in all that we do. We brew dozens of original beers each year with our list of ingredients and inspirations growing perpetually. Our collection of oak barrels has also become a primary element of our brewery. Nearly half of our beer is aged in wine or spirit barrels bringing forth flavors reminiscent of the Belgian countryside or classic American distillers.

Bottle: Poured a deep clear copper color ale with a medium light brown foamy head with good retention and minimal lacing. Aroma of sweet malt with some light dry fruits notes. Taste is dominated by sweet malt and is almost overly sweet with very subtle notes of dry fruits and a unrefined grain finish. Body is quite full with average carbonation and no noticeable alcohol. A bit deceiving overall with lacking complexity and some overly dominant sweetness.

Growler thanks to JohnC. Pours with a huge, rocky white head and great lace over a hazed golden yellow body. Aroma of bananas, spice, hops, their house Belgian yeast, citrus, vanilla and slightly bready. Taste is hoppy citrus, Belgian yeast, and graininess. Lively carbonation, dry mouthfeel.

Pours slightly hazy deep gold with nice white head. The aroma has musty apricots and pears to go along with sugar sweetness, honey, spices and herbs. The taste starts with a pulse of vague sugar sweetness and then moves into pear and apricot fruity sweetness. It becomes mildly honey like with a thin layer of tartness just underneath. Nice full flavors blending together creating a pleasing experience.

Bottle: Poured a light burgundy color ale with a very thin bubbly head with no retention and no lacing. Aroma of yams is dominating with some sweet malt. Taste is also dominated by yams with some sweet malt but absence of carbonation and overpowering of sweetness renders this beer quite gross. Body is very thin and somewhat oily with no carbonation and alcohol was not apparent. I must admit that I am very disappointed by this one – no carbonation and grossly sweet makes for a total mess. This is surprising considering the very good beers I had from the brewery previously.

Bottle shared by Marcus. Thanks!! Hazy orange color with a three-finger off-white head. Aromas of fresh citrus and mild Brett. Medium minus body with mild, spritely carbonation. Flavor is mild Brett/orange with interesting spices. Funk. Refreshing. Finishes bitter, funky, and dry. Really good ale.

Bottle: Poured a clear deep golden color ale with a small bubbly head with average retention and no lacing. Aroma of candi sugar with some dry European hops and floral notes also noticeable. Taste is dominated by sweet malt which borderlines on being gross with not much else in terms of characteristics. Body is somewhat oily with some low carbonation but no alcohol flavor. This is a sweet mess with no carbonation and must admit if also my first disappointment from a usually fine brewery.

Pours a clear gold into a tumbler. Bright white head quickly recedes to hug rim. Lemon, wheat and yeast aromas. Tingly upfront with marshmallow and lemon. Corriander and lavender in the finish.

Bottle: Stunning amber pour with a finger of creamy beige head. Sweet aroma with hints of Belgian spices. Not overly intense, yet still rich. Tastes rich and again sweet with light Belgian spices. Hints of bananas, cloves, and yeast. A deep, surrounding sweet maltiness rounds out the flavor. Thick mouthfull. Quite enjoyable.
