Patrick picked up homebrewing as a hobby, later to become an obsession, as a distraction to the banality of law school. Soon he was winning numerous awards for his beers and driving his wife, Rachel, mad with the messes that he would leave on the kitchen stove. Upon finishing school, he took it upon himself to draw up a business plan rather than study for the California Bar exam – a risky endeavor that shows through still today in the creative, genre-tilting beers that The Bruery prides itself on.
The Bruery is founded on the excitement that Patrick felt in those first years of homebrewing and we continue to strive for that same passion in every aspect of our business today. We never stop challenging ourselves to develop distinctive & imaginative beers, constantly pursuing improvement in all that we do. We brew dozens of original beers each year with our list of ingredients and inspirations growing perpetually. Our collection of oak barrels has also become a primary element of our brewery. Nearly half of our beer is aged in wine or spirit barrels bringing forth flavors reminiscent of the Belgian countryside or classic American distillers.

Bottle - pours a hazy dark gold, with a sudsy film on top - earthy/wheat/hay in the nose at first, with some peach sweetness underneath, as well as light spicy hops and faint whiffs of brett character - low carbonation, medium-bodied - zesty and peppery up front - moderate bitterness, with some flinty qualities, and some very young brett qualities/dustiness - some peach sweetness through the middle, followed by peppery hops as it dries out again in the finish - once the brett really kicks in, and this gets even more dry, it will be kick ass, but even now it is very good - reminds me of fresh Saison Dupont - finally, an American brewer that can make great Saisons.

Pours lightly hazy, with an effervescent body, and a foamy, moderately sustained head - lightly wheaty aroma, with some belgian yeast phenols, citrus peel, wildflowers, honey, fairly strong coriander - the carbonation is tingly and full in the mouth - the flavor is quite dry, with a moderate yeastiness - the oats add a lightly creamy texture, and give the beer a little more body, both of which compliment the yeast flavors - dusty and lightly peppery - the lavender comes on strong through the middle, as does a bit of tartness - a nice spicy bite at the end - some lemongrass character - subdued and refreshing - I prefer the imperial version, but this is nice.

Very low carbonation. A little sweet with a vegetable character, some sweet potato, light spice, and maple with sugar. Palte isn’t very good, very thin.

Hazy reddish with light brown head. Rich, mapley, pumpkiny nose with seeds, pear and maybe cranberry. Pretty fun nose. Very sweet on the palate, soft but sticky, with some maple. Flat...hmm. Sweet finish is a little spicy with a yam note. A little carbonation to carry it over the palate more would have helped because there’s some great flavours in here.

Cloudy beige-orange-yellow. Herbal, spicy (clove, allspice) aroma is also rather breadcrusty with a light brown sugar sweetness. Quite highly carbonated. Very dry and herbal with a hint of juicy fruitiness. Decent brew.

Hazy orangey colour with no head. Large bourbony aroma with light pear esters. Leaning towards boozy. Sweet vanilla dominates. Only a light representation from the underlying beer. Very bland, and kind of flat, which doesn’t help.

Thanks to goldtwins for sharing - sticky sweet aroma, with some fruit skin tartness to balance it - a bit of cherry and vanilla - the flavor is a bizarre mix of strong sweetness and fruit skin tartness - a tiny bit of spiciness - the heavy sweetness washes out a lot of the potential character of the beer - quads should be sweet, sure, but they should be a lot more complex than this.

Thanks to bgramer for this - completely still amber pour - a lot of yam/starch in the aroma, with maple, spice, nutmeg, cinnamon - tastes very starchy and yammy, without much else aside from nutmeg and a maple syrup sweetness - like pureed sweet potato pie - vegetal and very sweet.

Thanks to bgramer for the bottle - nearly still golden pour - huge oak, coconut, and vanilla in the aroma, but it smooth and mellow despite its intensity - the taste is much the same - a lot of coconut and soft oakiness - the bitterness from the original is smoothed out by the oak - the alcohol is also not as potent as the base beer - oak is all over this, and it adds a lot to an otherwise mediocre beer.

Thanks to beerbill for sharing - hazy straw color - nearly still pour - a lot of apple wine character in the aroma, with some odd phenolics and a little bit of a buttery quality - low carbonation, slick mouthfeel - tart, earthy, overripe apple and pear stick in the mouth, followed by a lot of honey sweetness, and a lightly bitter finish - lots of apple core throughout - very sweet, without enough to balance it.
