Patrick picked up homebrewing as a hobby, later to become an obsession, as a distraction to the banality of law school. Soon he was winning numerous awards for his beers and driving his wife, Rachel, mad with the messes that he would leave on the kitchen stove. Upon finishing school, he took it upon himself to draw up a business plan rather than study for the California Bar exam – a risky endeavor that shows through still today in the creative, genre-tilting beers that The Bruery prides itself on.
The Bruery is founded on the excitement that Patrick felt in those first years of homebrewing and we continue to strive for that same passion in every aspect of our business today. We never stop challenging ourselves to develop distinctive & imaginative beers, constantly pursuing improvement in all that we do. We brew dozens of original beers each year with our list of ingredients and inspirations growing perpetually. Our collection of oak barrels has also become a primary element of our brewery. Nearly half of our beer is aged in wine or spirit barrels bringing forth flavors reminiscent of the Belgian countryside or classic American distillers.

Bottled. Brownish pour. Pretty syrupy with a bit of maltiness. Some sourness and spice. OK

Draught from B-Tiger, pours a cloudy pale yellow. Lots of rye and grain aroma, some yeast. Decent but took away too much fromt he sweet saisony tastes IMO.

Bottled. Dark fruits cinnamon/raisin/ raspberry aroma. Poured super dark almost black. Taste was rum-like, and the alcohol was noticeable. Way too strong, almost a barley wine, not my favorite from the Bruery.

Draft from Ginger Man NYC. Poured a mild darkish brown, somewhat of a creamy head that laced the glass. Caramel, dark fruits, kind of a smooth mouthfeel. Pretty excellent.

Draught from Ginger Man. Poured gold, small head. Floraly aroma with an earthy taste. Dry finish. Ok.

Bottled. Poured a shiny gold with lots of head. A bit of spice and coriander - kind of tart. Refereshing.

(Draft at Oliver Twist, Stockholm, 20 April 2025) Dark brown colour, almost black, with brief beige head. Malty, vinous nose with caramel, treacle, oak wood, dried fruit and raisins. Malty, vinous taste with notes of caramel, treacle, dried fruit, raisins, figs, dates, burnt sugar and a mild spicy bitterness in a warming, slightly boozy, finish. Full body, sweet. Rich, powerful, sweet and boozy. Very nice.

10/05/2025 Sample at Palace Hall, Malmö May tasting - dark sweet roasted malty with big hits of bourbon, opulent smooth silky chocolate, some sticky toffee and caramel malts, full bodied, sweet bourbon infused lingering malty finish. Lovely.

Tap at BeerTemple, 24th April 2025. Pours thick and black. Aroma is chocolate and barrel, heady. Taste is sweet, thick and tasty. Decent stout, but not mind bending
