From my sake backlog. 350 ml bottle. Clear yellow golden body without any head. Quite strong in aroma, ripe apple and pear with sake yeast, rise and a hint of plum in the background. The flavor is definitively sake but at the same time totally different to any other sake I have tasted. Quite sweet, apple, pear and rise like expected from aroma, umami and something toffee or caramel like in the background. Tried to pare this with different kind of food, but that’s difficult. My experience was definitively not fish, nor anything salt, difficult to find the right cheese as well, something sweet and fat seems to be the best but did not have any chocolate in the house. Totally unique experience for me and highly enjoyable.

From my sake backlog. On tap and bottled (rating is a compartment of several tastings) . Clear, very pale-yellow body with no head and sparkling carbonation. Aroma is quite distinct Sake with rice, yeast and mild fruit like apple and some citric. Flavor is refreshing citric fruity, hint of grapes, mild rice and yeast. Medium body and average aftertaste. This is a light and refreshing sake that’s probably a nice start for somebody that not familiar with the style. The aroma is quite distinct sake, but the flavor feels a bit like a refreshing white wine. But compared with a white wine side by side there is a big difference, then the Sake flavor becomes more distinct with less fruitiness and more rice/yest flavor. The balance between sweet and light acidity works well and the touch of alcohol feels just right. Delicate and nice.

From my sake backlog. 350 ml bottle at Nøgne ؘ Christmas party 2013. Clear, close to water in color with no head of course. A bit oily texture, looks quite attractive. Aroma is relatively strong citric fruit, hint of star fruit and rice. Flavor is sweet fruity, fruity acidic, hint of yeast, rice and almond with a certain touch of nice warming alcohol. Smooth body and sweet and refreshing acidic aftertaste. Well balanced and slightly fruitier than the other Sakes from Nøgne as far as I remember. Easy to drink, mild in esters, should not scare anyone away from tasting Sake this one.

From my sake backlog. 350 ml bottle. Clear, pale straw golden body with no head. The consistence is a bit oily. Mild, subdued complex and really delicate aroma of fruit, especially citric fruit and a hint of something between canned pear and peach. Flavor is delicate as in aroma, relatively strong fruity for sake, acidic like berries, mild gooseberries, mild warming alcohol and a hint of yeast. Fine body and a long, quite refreshing, slightly acidic aftertaste with strong umami. This is the best sake I have tasted so far. Nice by itself and a perfect match with blue cheese.

From my sake backlog. 350 ml bottle. Clear straw-yellow body. Aroma is dominated by citric fruit but there are also a hint of raisins and some alcohol in the direction of noble German Eiswein. This is stronger in aroma compared with other sakes from Nøgne Ø. Flavor is fruity, especially citric, with a nice hint of acidity and warming alcohol. Soft and rich mouth feel. Long and pleasant aftertastes where a faint hint of fruity bitterness are detected after a while. A very nice and easy to drink Sake, almost a bit too easy drinkable, as I was getting used to some more challenging flavors in Sake by now, not meant to be a negative thing, just surprised

Aroma is quite strong fruity, like something between citric and green apple, phenol, rice, yeast and smooth pleasant alcoholic. Flavor is quite strong fruity in the same direction as aroma, almost spicy yeast, rice, balanced sweet, mild acidic and warming alcohol. Very smooth and balanced between sweet and acidic with a fine warming alcoholic touch. The body feels almost a bit fat and meat’ish (umami?) Long and fruity aftertaste. Easy to like, easy to drink.

From my sake backlog. 350 ml bottle. Milky white body with rice floaters. Mild aroma of rice, flowers and a hint of marzipan and herbs. Flavor is smooth rice, yeast fruitiness and a very nice kind of fruity acidity. Tastes smoother than it looks. Both smooth and a bit raw at the same time. I especially appreciated the acidity in the aftertaste.

Medium to full body. Quite smooth and balanced between sweetness and alcohol, none of them really stands out. This might be a good introduction to sake beginners as myself.

16oz bottle. Right on the edge of the best by date by holds up just fine. Brings you back to the days when Imperial Stouts were great. Rich malts, coffee, chocolate, balanced by a big hop bill. Rich and full bodied, but downright refreshing compared to what you get in the US in 2026 when you order an Imperial Stout. Delicious. I might have to buy another bottle or two.
